About this Cook
I'm Jen. I'm a mid-twenties wife and mother to a 2 1/2 year old girl and an 8 month old boy. My husband and I stopped eating meat about a year and a half ago, though we still eat some fish. I love to cook, and I've really gotten into it in the past year or so. I'm always on the hunt for a creative new recipe!
My favorite things to cook
I love making oatmeal chocolate chip cookies, apple pie, sweet potato corn chowder, and fried rice. And much more, but those are the top ones.
My favorite family cooking traditions
I love holiday cooking! Every year for as long as I can remember, I've made stuffed mushrooms for Thanksgiving, along with deviled eggs and the occasional pumpkin cheesecake. Since becoming a vegetarian, I've been much more proactive about holiday meals, and I made almost the whole Thanksgiving and Christmas meals this year for my family, parents, and in-laws with recipes from this site! I love being in my mother-in-law's big kitchen surrounded by family while chopping, mixing, and baking. There's nothing better!
My cooking triumphs
I've almost mastered the art of ravioli, thanks to my new pasta roller. Making pasta is so much fun! My fried rice continues to improve every time, and I think I've perfected my vegetable stew. And my husband and I have made some darn good bread!
My cooking tragedies
I've gotten through a few recipes just to realize that I don't like them at all. I can't cook eggplant to save my life. Also, I cannot get tofu to look, feel, or taste like anything but tofu. Not with pressing out the liquid with weights, marinating for days, or freezing and thawing. I like to eat it, but I'll let someone else prepare it. Some things are better left to the professionals!

Pumpkin Corn Bread
These are delicious! I made them with gluten-free flour, and added a little ground clove and cinnamon. My kids kept asking for more! I also used these to make Thanksgiving stuffing, and it came out great. Highly recommended!

Mexican Whole Wheat Flour Tortillas
These came out perfectly! I used Earth Balance vegan buttery spread instead of shortening. My husband was very impressed! I'll definitely be making these again and again.

Salmon Rosemary Burgers
These were wonderful! My husband loved them. I omitted the horseradish, but used everything else. They held together pretty well.
