Irish Soda Bread

I used 3/4 tsp. anise extract instead of caraway seeds and 2 cups raisins and 1 cup craisins, but 2 cups of fruit total would have been plenty. I only baked it for 60 minutes, and it was perfectly done. Very good taste and nice texture; tasted even better the next day. Good recipe!

Quick and Easy Cheesecake Pie

I cut the recipe in half because I made it with Splenda, and no one else in my house will eat sugar substitutes. I also used light cream cheese. I baked it in an 8-inch Pyrex pie pan. It came out very light and delicious, and I don't even have to feel guilty eating it since it's low fat, sugar free and gluten free. Thank you for the great recipe!

Fried Cabbage II

Phyllo Chicken Packets

I used the small (9" x 14") phyllo sheets, which were the perfect size to wrap the chicken in. I used 5 or 6 sheets for each. I also added 2 ounces of cream cheese to the sauce, which someone else suggested. I thought they were delicious. My family loved them.

Bacon and Tomato Cups

My husband and son couldn't stop eating them! I used Grands biscuits, which I separated into thirds. I took other reviewers' suggestion and used only about 1/3 cup mayo. I baked them about 16 minutes, so they were nicely browned and the biscuits cooked through. Great recipe!

Old Fashioned Fudge

This recipe is a definite winner. I'm surprised at the past bad reviews. I followed the recipe exactly (except that I added 1/2 cup of broken walnuts with the vanilla), and it came out great. I think this fudge recipe is much better than the ones that call for marshmallows. I couldn't find my old recipe for fudge, so I tried this one since it's very similar, and I think this recipe is even better than mine. I like the addition of corn syrup. I think it gives the fudge a smoother texture. My family LOVED it.

Chicken Potpie

I cut the recipe in half and made one 9-inch pie. I used leftover Thanksgiving turkey instead of chicken, and I cut the butter down to 1/4 cup. I added a little more salt and pepper, because I thought it was under-seasoned. Using fresh ingredients and making your own cream sauce really makes a difference. My family loved it.

Cranberry-Pineapple Minis

I made these for Thanksgiving, and everyone loved them. I used paper cupcake liners, which I sprayed with Pam, and I had no trouble at all peeling the liners off. They tasted great, had a nice crunchy texture, and looked very pretty. I'll probably make them again for Christmas and next Thanksgiving.

Best Bread Machine Bread

EXCELLENT! I followed the recipe exactly. I've had problems with bread not rising enough, but this bread came out very light and high. Also, homemade bread usually gets stale very quickly, but this bread tasted better and had a great texture after a couple of days. Thank you for the fantastic recipe!!!

Banana Praline Muffins

I made them gluten-free by using gluten-free Bisquick for the pancake mix. I also doubled the amount of filling, as others suggested, and they came out excellent! I sprayed the cupcake liners with Pam, and they didn't stick to the liners as muffins sometimes do. Great recipe.

West Tennessee Corn Bread

I followed the recipe exactly and it came out great; not dry or too sweet as others have said. I even used low-fat mayo. It was perfectly done in 18 minutes. The best thing about this recipe is that it's gluten-free.

Peanut Butter Treats™

I made these using chunky peanut butter, and I spread melted semi-sweet chocolate mixed with a little corn syrup on top. I usually don't like Rice Krispie treats, but with the addition of the peanut butter and chocolate, they were delicious! Quick, easy snack.

Mom's Incredible Spinach Gratin

Delicious! I made 1/3 of the recipe using a 16-ounce bag of spinach. I used mozzarella cheese instead of gruyere and whole milk instead of cream. This is now my favorite spinach recipe. Thanks, Nurse Ellen!

Cajun Cake

I made half a recipe and baked it in an 8-inch square pan for 28 minutes. I didn't use a mixer; just stirred by hand. I used a little less butter in the topping, and I poked holes in the cake w/a fork before putting the topping on. It came out very good. I refrigerated it because of the pineapple. It tastes even better cold and after it sits a couple days.

Lemon Yogurt Muffins

Very light and delicious! I followed the recipe exactly, except I used Dannon Vanilla Light & Fit yogurt. I only had one lemon, so I had to add some bottled lemon juice to make 1/3 cup for the topping. You really need 2 lemons to have enough zest and juice. I had enough batter to make 14 muffins, and they were perfectly done in only 18 minutes.

Delicious! I made half a recipe. I used golden raisins, which I soaked in hot water for a few minutes. I baked it in an 8-inch square pan for 30 minutes. It smelled great while baking and had a very good flavor and texture; not overly sweet and just the right amount of spice.
