Pina Colada Rum Cake

Mexican Whole Wheat Flour Tortillas

I cut the recipe in half and made 10 large tortillas. I used olive oil instead of shortening, and I increased the amount of water because the dough was very dry. After forming the dough into balls, I let it sit for about 1/2 hour. The dough was very easy to work with and not sticky at all, and I was able to roll the tortillas paper thin. They fried up beautifully. Thanks for the great recipe: I'm going to use it often!

Delicious Ham and Potato Soup

This soup is not only delicious, it's also very quick and easy to make. I followed the recipe exactly, except I used more ham and omitted the salt because the ham was very salty, and it came out great. Thanks for the recipe....it's a definite keeper!

Taco Seasoning I

I mix up a big batch of this seasoning, store it in a jar in the fridge, and use it whenever I make tacos. I add 3 tablespoons mix and 2/3 cup water to each pound of ground meat (hamburger or turkey breast). It tastes very similar to packaged taco seasoning mix, but much better. I'll never buy the packaged mix again. Thanks for the great recipe!

Applesauce Cake III

Delicious! I made half a recipe. I used golden raisins, which I soaked in hot water for a few minutes. I baked it in an 8-inch square pan for 30 minutes. It smelled great while baking and had a very good flavor and texture; not overly sweet and just the right amount of spice.

Lite Coconut Cake

Delicious! I made this for Memorial Day in my checkerboard cake pans. I added a tablespoon of coconut extract to the cake mix for added coconut flavor. The frosting and filling were very light, and I liked the tang from the sour cream.

Black Bean, Corn and Turkey Chili

Very quick and easy. I followed the recipe exactly, but I used about 2 cups frozen corn instead of canned. It came out very good. My family liked it. I'm going to double the recipe next time, because it doesn't make a lot, and chili is much better left over.

Sour Cream Coffee Cake

10 Stars!! Excellent, excellent recipe. I agree w/other reviewers that a 9x13-inch pan seemed too large, and that the batter was very thick and hard to spread (especially the top layer), but I followed the recipe exactly as written (except for the baking time) and the cake came out perfect. It was very moist and delicious. Some reviewers said the cake was dry, which might be because they over-baked it; 40 minutes is probably way too long. My cake was done in only 30 minutes. My mom used to make a similar cake using a box cake mix, but I think this recipe is much, much better. I avoid using box mixes, because I don't like that box-mix taste. I'm sure I'll make this recipe often. It's fantastic!!!!

Potato Chips

These came out GREAT! I like the idea of using Pam instead of oil, and they came out as good or better than the ones I made w/oil. I didn't use parchment paper, just sprayed the plate w/Pam. Depending on how thin the slices were, they took anywhere from 3-1/2 to 8 minutes to cook. I cooked them until they turned brown, and they got very crispy. Thanks for the great recipe, Bobbi!

Caramel Snack Mix

I need to add another 5 stars!! THE PROS: Delicious, very easy and economical to make, and since the main ingredient is healthy cereal, not quite as bad for you as most snack foods (eaten in moderation, of course). THE CON: This stuff is so addictive, it's hard to stop eating it. The recipe makes a LOT, but after a day, you'll be asking, "Where'd it all go?" Tastes kind of like Honey Bunches of Oats cereal and a little like pecan pie (as another reviewer stated). Someone said theirs came out sticky, but mine wasn't sticky at all. I cooled it on a large silicone mat. It cooled very quickly and broke up nicely. I LOVE THIS RECIPE!!

Chef John's Pumpkin Pancakes

These came out great. The batter was very thick, and the pancakes came out nice and fluffy. I made 14 4-inch pancakes. I cooked them in butter instead of oil and served them with maple syrup. My husband, son, and his friend devoured most of them, and my son couldn't wait to eat the leftover pancakes for breakfast the next day. Really unique and delicious recipe.

WHIPPED SCOTCH COOKIES.

Great recipe. I only made 1/4 of a recipe, because I just wanted to try it out. I piped the dough into swirls using a pastry bag and large star tip. I baked them at 300 degrees and they were done in 15 minutes (my ovens bake everything fast). They were very quick and easy to make, and they came out very delicate and delicious. Thanks for sharing the great recipe, Manella!

Fajita Seasoning

This is soooo good; much better than the two prepared fajita mixes I tried. I doubled the ingredients (except for the salt), and used 2 pounds of BLSL chicken, 2 red, yellow, and orange peppers (6 total, which I sliced), and 1 large thinly-sliced yellow onion.

Eggnog Cheesecake III

Fantastic recipe! I baked it 10 minutes at 425 and only 40 minutes at 250, and it was perfectly done. I have a convection oven, and things tend to bake faster. The texture was very smooth and light, and it tasted great. It didn't crack at all like most cheesecakes tend to do, so it looked very nice. This is probably the best cheesecake I've ever made. It actually tasted even better the next day!

Cherry Pie Filling

I made half a recipe to use on top of a Black Forest cake. I placed frozen cherries in a saucepan, sprinkled the sugar over, and let them sit until they juiced slightly. Then I added the cornstarch and cooked for a few minutes until thick. It came out perfect.

Chef John's Shrimp and Grits

Delicious! I made a double recipe, and I had a lot of grits left over. Next time I make it, I'll probably double the grits ingredients and triple the shrimp/sauce ingredients so that I have the right ratio of shrimp/sauce to grits. I had never made grits before, and the recipe didn't say to cover the pot, but the box of grits said to cook them covered, so I did. Other than that, I followed the recipe to a T.

Creamy Lemon Chicken

Excellent recipe! It's incredibly quick and easy to make, and the sauce is very creamy and delicious! I sliced the chicken breasts in half horizontally, which was much easier and less messy than pounding them out. I cooked 1 cup brown rice in 2-1/4 cups chicken broth for about 35 minutes. My husband and I both really liked this dish. I'll definitely be making this again.
