Cinnamon Ice Cream

Very very tasty! I used a combination of honey and maple syrup i(about 3/4 the amount called for) nstead of refined sugar and it was super yummy. My only concern was that both times I made this, there were cinnamon clumps in it. I wonder how to whisk it in better?!

Killer Chili

Run For The Roses Pie III

Butterscotch Oatmeal

This was so delicious! So clever to add an egg to oatmeal- makes it have a custard-like texture which is oh so yummy. I love to experiment with adding things to oatmeal- but this is a much better base recipe than the traditional recipe. I like to add vanilla, cinnamon, and nuts. Also almond extract. Berries make a delicious add in, too!

Chocolate Toffee Cookies II

I prefer a softer cookie, so at first I did not care for these. I put them in tupperware and tried them again the next day, however, and I couldn't stop eating them! They were the Perfect consistency!!! If you prefer softer cookies, I would suggest making them a day ahead! I did not have any rum, so I doubled the vanilla- didn't miss it!

Chicken Enchiladas V

These were amazing. I made them for a dinner party last night and we are still talking about them today! (Although I accidentally left out the green chiles-oops!) So I put them in a serving bowl to put on top. I also cooked the chicken in salsa and put all the "cooked salsa" in with the chicken mixture.

Ranch Bean Dip

I personally didn't like this, but my husband loved it. I found a "fiesta ranch" mix and used that instead, which really gave it a kick. I also didn't use all of the cheese because it seemed like a lot!

Barbequed Pork Ribs

These were great! I took a bit of a shortcut (didn't have them in the fridge for the full time), because I was running out of time and they were still excellent. I did add a few T of sugar as suggested because I, too, like my sauce sweeter. Next time I might try and simmer them a little longer on very low to see if it makes them even more tender.

Cream Cheese Mints

I made these mints for both my wedding and my friends. I get a little creative with the flavoring and use candy oils other than peppermint, such as cream de menthe, cheesecake, pralines n cream, and butter rum. They are all so good. I personally wasn't a big fan of the cheesecake- I thought they tasted too sweet but the lady that sold me the oil at the candy store says it is the most popular flavor for these mints! I also use candy molds- my wedding was at Christmas time and so I did molds of doves, gifts, bells, and christmas trees (so cute- I used green coloring and the white sugar looked like snow!) It is important to roll them in granulated sugar before putting them in the molds and then pop them out onto a wax paper-lined tray or they will stick. I also let them dry out overnight.
