Chicken Salad

Easy, good dressing. Many options for varying the fruits/veggies/nuts in this salad. Will be a standard recipe in my kitchen!

Teenie's Accidental Rhubarb-Raspberry Pie

Good, easy recipe with the right amount of sweetness. When I filled my crust, I thought it seemed a little thin so I added another cup of fruit (strawberries) with an additional Tbl flour and a sprinkle of sugar. Brushed the top crust with milk and a sprinkle of sugar. Everyone who tried it loved it!

Basic Ham and Bean Soup

Like this easy, simple soup! Soaked beans overnight then cooked all ingredients in crock pot all day on low except for 1-1/2 hrs on high mid-day.

Baingan Bharta (Eggplant Curry)

Served with a side of brown rice and marinated chicken. Omitted jalapeno peppers. Used 14 oz. drained diced tomatos. Overall a tasty, easy dish. I easily cooked the eggplant by cutting it length-wise and placing it cut side down in a glass dish wtih about 1 tbl of water. Microwaved for 5 minutes and done!

Rhubarb Custard Pie I

Easy, excellent tasting pie! I slightly increased the flour (used 3 tbl) with frozen rhubarb. Also brushed the top crust with milk and sprinkled lightly with white sugar.

Strawberry Orange Rhubarb Cake

I baked this cake as recipe called, but substituted dried orange peel. Absolutely delicious! My husband, small children, parents and relatives visiting from Europe had nothing but high praise for this recipe. It's a keeper!

Rhubarb Pie IV

Used 5 cups rhubarb. Also layered 1/2 rhubarb, 1/2 sugar mixture, rest of rhubarb, rest of sugar mixture. Turned out good for my second-ever pie. Will use this recipe again. Baked 40 min.

Simple Stir Fry

our family (including 2 toddlers) enjoyed this quick, easy recipe. I used several suggestions including reducing the amount of water; also used stir-fry veggies in addition to green pepper and onion and served it over brown rice.
