Venison Italian Soup

Reviewed: Mar. 29, 2009
Great base recipe...needs additional liquid so we added about 3 cups of beef broth from the pantry.

World's Best Lasagna

Reviewed: Aug. 21, 2011
After reading some of the reviews, I made the following changes: added red wine, used fresh basil (this really added some flavor), half the salt, added mushrooms (personal preference) and then used wheat noodles. Also, the fennel seeds are a must! It came out great!! Too bad I didn't invite company over, but that means more for my husband and I.

Superb Cranberry Sauce with Apples and Pears

Reviewed: Nov. 27, 2011
I have made this cranberry compote the past three Thanksgivings...and it is ALWAYS a hit! It is a great accompaniment to the turkey and stuffing. For best results, make it a day ahead of time and refrigerate so that ingredients meld together...yum! (side note...who would ever just open a can of cranberry sauce and serve it??)

This worked out great with my Leg of Lamb. Didn't have green onions, but used regular onions instead and it was great!

Mandarin Orange Cake I

Reviewed: Jun. 28, 2009
Made this recipe for a hot summer picnic and it was a big success. So that the frosting would harden slightly, I kept it in the refrigerator for about 3 hours before taking it. It was cool, moist and very tasty. Great reviews and most importantly, easy to make.

Italian Sausage Soup with Tortellini

Reviewed: May 25, 2009
My husband and I have made this several times and it comes out perfect every time. For convenience's sake, I used canned whole tomatoes instead of fresh. Also, when I doubled the receipe, I used half vegetable broth and half beef broth and it turned out great!

Spinach Enchiladas

Reviewed: Jun. 2, 2012
I needed a recipe to entertain a vegetarian couple for dinner...and luckily, this dish was a hit with everyone. Easy to assemble. As suggested by others, I did add some extra spices to the mix (cumin, red pepper flakes and diced jalapenos). Also, I used red and yellow corn tortillas to give the dish a little color/variety.
