Braised Balsamic Chicken

A great weeknight dish that you can easily make in 30 minutes with basic ingredients from your pantry and freezer. This deemed a "keeper" by my husband. I served it with mashed potatoes (I needed to get them used up) and braised spinich.

Slow Cooker Carnitas

A favorite of my husband! I doubled the spice rub except for the cinnamon. Heating the left overs in the oven took this over the top. Next time I will leave out the chicken broth, it was too soupy as the recipe was presented

Lentil Soup

My meat eating husband really liked it, although he said it would have been a 5 star if I had added meat to it. My 5 year old gobbled it up. I doubled the diced vegetables and spices and used 4 cans of chicken broth. I served it with a bit of balsamic vinegar and parmesan cheese in each bowl. with corn muffins on the side. It was very filling. The recipe makes a lot, there was enough that I now have 2 more dinners ready to go in the freezer for a family of 4.

Root Beer Pork Chops

A keeper! My husband and I made this for my mother visiting from out of state. I did use a tsp of the chipotle tabasco sauce and I still felt it could have used a little more kick but my Mom thought it was perfect as I had made it, a good balance.

Michelle's Coconut Chicken Curry

I gave this an overall 3 because my husband loved it. I thought it was "ok" a little on the bland side I too made it exactly as needed. It needs a little doctoring up as the other reviews suggested. It's two biggest advantages are that it's super quick and easy and it also tastes even better the next day.

Gelatin Spritz Cookies

Great recipe with great flavor! I will use it again next year. One caution is that you really have to watch the time very carefully or your cookies will burn in the blink of an eye and be on the crispy side Unfortunately my new cookie press didn't have what it took to go the distance and it went in the trash can :(
