I don't usually like to make banana bread--always turns out underdone and mushy for me, despite cooking much longer than recommended. This recipe turned out great. I halved the recipe and made two loaves (using 2 eggs). A prior post recommended 325 deg for 75 minutes. My oven cooks a bit hot, so I checked at 55 minutes--the toothpick was clean and they were done! After cooling, both loaves easily came out of the pan--no chunks of left-behind mushy bread. I had added the brown sugar crumble topping, and the taste is quite good. This will be a go-to banana bread recipe.
