Garbanzo Bean Chocolate Cake (Gluten Free!)

I made this for the second time today. I read a review that said they accidentally omitted the sugar and it still tasted great...well they were right. I omitted the sugar and added 1tsp vanilla and in increased the baking powder to 1tsp and it was delicious! I made a second batch with a tsp of almond extract and it was yummy too. My daughter is taking them for her birthday treat for her class tomorrow. I used 2 cUps of chick peas I cooked instead of canned.

Healthier Best Brownies

I made these yesterday to use with Williams Sonoma ice cream sandwich molds. I made 2 batches, one almost eactly as written and one with coconut oil instead of butter(I ran out of butter). The only change I made was to cut he sugar a tad. I used between 1/3 and 1/2of a cup of sugar. Both recipes were excellent! I never make brownies because I can't eat something that requires so much butter.

Oven Roasted Potatoes

Mushroom Stuffing Balls

Excellent! I made a couple of changes. I used about 12 oz mushrooms, 3 tablespoons of butter, 1 cup bread crumbs, 1 clove garlic that I grated into the mixture, I only used 2 eggs and I added 4oz of pureed tofu to add some protein. I also used some Kirkland no salt seasoning along with the parsley. My 3 year old ate 5 ! and my husband and I think they are very yummy. Can't wait to make again, next time I will try adding some spinach. Great snack for anyone.

Seven-Minute Pudding

I just made this and it was quite tasty. I did add a block of tofu to it and 2/3 cup of chocolate chips. I cut the sugar to 1/4 cup but will up it to 1/3 next time..it was not quite sweet enough. Also, I followed the advice of another and put everything in the blender(except choc chips) and then cooked it on the stove. This is a keeper.

Vegetarian Moroccan Stew

I did not want to have a lot of clean up this evening so I made this in the crockpot and it was very good. I did add a 1/2 tsp of cinnamon in addition to the stick and 3tsp of cumin instead of 2 and a bit more water(as previous reviews suggested). I did not have potatoes so I did not use any and used 2 cans of chick peas to make it meatier. Delish. Will make again.

Citrus Pork Roast

I made this today and was going to cook it on low for 7 hours. After 3.5 hours it was done and was at 190 degrees. It was a bit dry. The flavors were good but I was disappointed in the dryness. My roast was 2.5 lbs.

Easy Vegetarian Corn Chowder

Good easy soup. Hubby said he liked it. I needed to use some excess milk and this did it. I only had 1 can of creamed corn and that was fine. I also added 2 potatoes(needed to use up). Will make again.

Zucchini Yogurt Multigrain Muffins

This recipe was GREAT. They were very moist and the entire family loved them. I made them even healthier. Used 1 1/2C whole wheat flour; 1/2 C oat bran; .1/4C wheat germ; 1/2 cup honey and 1/2 Cup sugar. I will cut the sugar even more next time. My son added mini choc chips and we baked half of them in a mini muffin pan.
