Perfect Turkey

am a novice, at least regarding holiday cooking. this recipe made my first turkey FANTABULOUS! I will not prepare a bird any other way. great drippings made for divine gravy as well! I used bacon grease instead of butter and would def use more veggies next time.

never liked stuffing, as a child, until I had it with sausage. this recipe (peppers omitted but parsley and chantrelles added) was divine, and was even better than the original dish that won my heart as a kid! a definite keeper, and permanent presence for my future turkey dinners

tried this recipe and it set okay b/c I had the mixture at a rolling boil longer than the original recipe calls for, as some reviews advised. but then the flavour fell flat. I am going to try it again and see if I can find that fine line....

Broiled Scallops with Chanterelles

tried this last night with white chantrelles, but didn't have scallops yet had halibut in the freezer. I would recommend it! quick and uber-tasty. I did add a few things: a small amount of chopped onions and a 1/2 cup or so of chopped spinach with the tomatoes, and then salt and pepper to taste. I served it over parsley rice but it would be good over pasta as well.

Roast Chicken with Cracked Peppercorn Sauce

Love, loved. No vermouth in my liquor cupboard, so used the chicken broth and white wine suggested; am lactose (and gluten) sensitive, so did a butter and corn starch gravy with poulty seasoning, rosemary, thyme, sea salt and of course cracked pepper. Was moist and delish! (My man really liked it too!)
