Chicken Mango Salsa Salad with Chipotle Lime Vinaigrette

I followed the recipe exactly - it has a wonderful medly of flavors. Next time I may chop up and add some iceberg lettuce just to give it a little crunch.

Baked French Toast With Maple Syrup and Granola

Didn't feel it was cooked long enough. Inside appeared to be soggy. I would increase the cooking time at least an additional 15 minutes at 300 before kicking it up to 375. Also the amount of bread made more than two layers (actually made four layers which may account for the needed time to cook). Very sweet. I would decrease the sugar by half. I would also sprinkle additional granola between the layers. Will try again.

Chris's Incredible Italian Turkey Meatloaf

I love this recipe. My husband doesn't eat red meat so I am constantly looking for new turkey recipes. I've tried to make a turkey meatloaf before, but it didn't turn out anything like this! I only put half the sauce on before cooking and leave the rest as a side to spoon on by anyone who wants more after it's cooked. I layered strips of roasted red and yellow peppers over the sauce before baking. Next time I want to make meatballs, this is the recipe I'll be using! For fun, I would add some freshly grated parmesan cheese for the meatballs. Thanks Chris!

Navy Bean Soup I

My husband was having a potassium difficiency, so I went in search of recipes that were high in potassium. My husband grew up with navy bean soup, so I thought I would give this recipe a try. My husband won't eat ham, so I substituted 1/2 lb. chopped smoked turkey. I like things with a little spice, so I used Rotel tomatoes, which contain green chilis. Because the Rotel tomatoes come in smaller cans, I used two cans and reduced the water by 1/2 cup. My husband really enjoyed it. He said when they were kids, they would load it up with ketchup, but that wasn't necessary. There was plenty of flavor and potassium - this fit the bill exactly.
