Best Brownies

These Brownies are definitely a little cakey but to be honest they're still really good. Who can call a moist brownie a bad one? I also halved the amount of icing sugar and made a glaze... perfect for the brownies. I'll be making them again and then taking them out the oven at about 20 mins (I did 23 this time) in an attempt to capture the "fudginess" other reviewers have. A good chocolate fix!

Southwest Stuffed Chicken

Absolutely awesome! I loved this recipe and even though I tend to steer clear of chillis I did de-seed and chop up a couple! The slight zing was just what made this meal special. In future I will use my own bread crumbs because the store-bought ones weren't that great but otherwise my chicken was faultless! I will continue to make and perfect.

Broccoli Soup

I can't fault this soup at all! I think its wonderful BROCCOLI soup so you should definitely expect the broccoli taste! My only addition was some smoked turkey ham I had roughly chopped because I think the smokey taste is always welcome in soups but otherwise I listened to other reviewers and added my fresh broccoli right at the end to keep the bright green look and stirred in some cream cream for a smoother flavour. Also paprika spice for great aesthetic appeal! Wonderful quick and easy recipe! Will definitely make again!

Southern Mushroom Soup

Tasted really good up until the point I added tinned cream because I had no fresh... wont be making that mistake again; what a perfect waste of fresh mushrooms! Keep it real and its lovely!

Irish Chicken and Dumplings

I understand what other reviewers have mentioned about the lack of chicken flavour but I think this is a great stew none-the-less. Lots of good veggies and the dumplings are the best.. thank-you L.M. Thorne for the easy dumpling recipe. A nice gentle stew that you could flavour with extra spices as you like. Mmmm.

Broccoli and Carrot Lasagna

Now... I totally skimped on this recipe and it still tasted very yummy! Though it ended up being a sauce for the sheets of lasange I still enjoyed every mouthful! Only had the condensed soup and cheddar cheese so I had a go at it with these ltd ingredients (and the veg, pasta and spices of course) and I was happy with the results. Though, like I said it becomes a sauce rather than a dish. I cant wait to add the cream cheese because I think that is the secret ingredient! Thanks for a super easy mmmm recipe!

Chicken a la King I

This is a great recipe for Chicken a la King! I love my dish to be as flavoursome as possible so I shredded the meat of a shop-bought rotisserie chicken and followed the recipe. I added onions like another reviewer and eye-balled the amounts but this recipe is so easy to follow and personalise (lots of white pepper, more milk, less water) that I have to give it five stars! Thanks!

Shortbread Cookies II

I decided to try this shortbread after reading all the rave reviews it received... I am so happy that I did! Not only is the recipe simple, does it use readily available ingredients but I was able to make it without the aid of an electric beater and this cookies still turned out excellently! I think using good quality butter is the trick to the great taste but the texture is very shortbready too, not too dense but still recognisable as shortbread! I also used vanilla sugar as i didnt have any extract and this seems to have given a very gentle vanilla flavour. Like other reviewers I also shaped the dough into a rough log, wrapped it in plastic wrap, refriegerated and then cut 1 inch slices. My cookies spread to about 1 1/2 times their original size and needed the full 12 mins in the oven. Having being forewarned, I only made 1/4 batch of this recipe and turned these cookies into an amazing Christmas pressent.

Ground Beef Stroganoff

This is really a good mince beef stroganoff... I sauted my mushrooms,garlic (fresh) and onions separatly from the mince then added it all together. Also, I used a bit of mushroom soup powder to do the thickening for me as I also found it wasn't quite the "right" consistency. Another useful hint, I think, is to reserve the tinned mushroom juices and use that in conjunction with the stock... Though to be honest I'm not sure how much flavour that added. Just that I hate to throw anything away. All in all I simple, easy and time efficient recipe!

Halibut Weaver

This seemed like a great dish (esp after reading all the reviews...) but I think my choice in fish let me down. I used Sheri, a saltwater fish readily available in the Middle East, and all I could taste was the sauce. So for now, I'm afraid 3 stars, but as soon as I try this recipe with a different, assumably more flavourful fish I will be sure and update. The sauce itself was as expected: very tasty! I noted all the other reviewers additions and added paprika, onion and garlic. Made for a lovely topping which is incidentally also very good on melba toast also popped into the oven for 6-7 mins! Lovely appetisers..

Chicken Satay with Homemade Peanut Sauce

What a lovely recipe! I last had chicken satay with peanut sauce 3 or 4 years ago and have been hankering to try it out for ever so long! There is definitely too much sauce for this amount of chicken, I suggest making only 1/3. (I'll be freezing the left over though; it just too good to throw away!) I also suggest tasting your sauce and adding whichever ingredient you feel is lacking. Finally I processed my onions to get that 'minced' requirement and it worked like a bomb!

Caesar Salad Croutons

I think the trick to this recipe is baking the cubes before you fry them which most other recipes don't suggest. I had a little too much garlic oil so I won't make so much next time... Everyone loved the croutons.

Caesar Salad I

A lovely Caesar salad dressing! Can't complain at all! I used concentrated lemon juice and it was too strong, so I suggest tasting the dressing as you go. Absolutely lovely!

Sweet Potato Pecan Pie

I love this recipe! I only use 1 cup of cream though as I find that anymore yields too much filling... I also use only half a cup of brown sugar with the pecans so that they caramelise better. I add extra spice because I LOVE chrismassy flavoued desserts. I highly recomend this recipe to all.
