Spicy Lime-Cilantro Marinated Flank Steak

I am giving this a 5 because the marinade is versatile. I made this for my boyfriend a few months ago and we both really liked the flavor, but agreed that it tasted similar to something we'd had before. Finally, we figured it out....a spicy pasta salad dressing. The other day I used the marinade recipe and made an amazing pasta salad. I added more jalapenos than called for and used onion powder because I didn't have any onions on hand. If you make it too spicy just add a little extra honey or brown sugar to cool it off a bit. I used rotini pasta, cubes of coldy and cheddar cheese, grilled chicken and diced olives. It was even better cold the next day where I added some turkey bacon to give it a little crunch.

Garlic Chicken

We absolutely loved this recipe!! My boyfriend and I wanted to make a quick and easy dinner with ingredients already on hand. We cut the chicken into chunks instead of just using 2 whole chicken breasts. We cut down on the olive oil a little bit and mixed it with melted margarine. We warmed some minced garlic in the metled margarine/olive oil then dipped the chicken chunks into the mixture. After coating the chicken well we dipped it into the breadcrumb/cheese/spices mixture. We baked covered for 30 mins, then uncovered for 10 mins. The chicken came out moist and juicy and the coating got a little crisp. It was absolutely wonderful!!! I will definitely be making this again

Smothered Filet Mignon

This recipe was amazing. I found this months ago, but was waiting for a special occassion to make it, what could be better than filets on sale at the grocery store? I only made a few slight changes. Instead of course dijon mustard I used spicy brown mustard. We love spicy brown, so everything that requires mustard we substitute spicy brown mustard. I think the recipe calls for a little too much rosemary. I liked the taste of the marinade, but didn't like all of the crushed rosemary pieces. So I through it in a blender on purree and it came out great. The pieces of rosemary were blended in the sauce and it thickened up a little. I marinated the filets for an hour, but took another reviewers suggestion and let them sit at room temperature. Instead of white sugar I used brown sugar when grilling my onions. I didn't have an indoor grill, so I broiled the steaks. Right before they were done I topped with blue cheese, then added the onions while serving. Next time I will melt the cheese over the onions to keep everything in place. I was a little worried all the marinade, onions, and blue cheese would taste together, but they came out wonderfully. My boyfriend said it was one of the best meals I have made and was a great meal to compliment the stressful day he was having. He just got lost in the yummy steaks. Great recipe!

Angel Hair with Feta and Sun-Dried Tomatoes

I am giving this a 4 because I didn't really follow the recipe's serving suggestions. I didn't really measure anything, just added things to taste. Instead of sun dried tomatoes I used a can of Hunts diced basil, garlic, oregano tomatoes. Instead of garlic cloves I used minced garlic. I used an entire container of tomatoe basil feta cheese. This came out wonderfully though. The flavor was great and it was quick and easy to make. I will definitely make this again.

Basil Goat Cheese Pizza

My boyfriend and I loved this recipe. There were no leftovers. We used a little more basil and rosemary listed. We used a pre-made Boboli thin crust. Next time we would use a thicker crust.

Simple Garlic and Basil Pesto

This recipe was great, the only thing missing is the salt. I left out the Brazil nuts and added a bit more cheese. When I was done making the sauce I threw it in a skillet with cooked fettucine and mixed it to coat the noodles. My boyfriend is an avid pesto lover and he thought the only thing missing was the amount of salt, but you can easily fixe that by adding it to your pasta dish.

Buffalo Style Chicken Pizza

This turned out really well. I used a Boboli pre-made crust. I followed other users exmples and just brushed on enough Blue Cheese dressing to coat. I used Ken's Steakhouse Chunky Blue Cheese, but next time I might go with a different brand, it just lacked something. Instead of cubing I shreded the chicken then mixed it a little bit in a mixer with the butter and hot sauce. Next time I would soak the chicken in the hot sauce to seal in the flavor, it lost some of it's spice while it was baking in the oven. But that was easily fixed by adding more hot sauce and dressing after it was baked.

Cream Cheese Jalapeno Hamburgers

I made this the other night and my boyfriend and I absolutely loved it. I used a jar of mild sliced jalapenos and a container of chive and onion cream cheese. We threw the cream cheese, meat, and jalapenos in a Kitchen Aid mixer and mixed it up until it was all nice and pink. This broke up the jalapenos a bit. We were a little concerned that the meat being mixed so much wouldn't patty well or hold together, but we were wrong. Mixing it a lot also gave the burgers a really great light texture that brought out the flavors. We didn't have a grill at the time, so we cooked the burgers in a skillet and they came out great. We wished we hadn't scaled down the recipe so we would have lots of left-overs.

Catherine's Spicy Chicken Soup

I made this the other night and my boyfriend and I loved it! I scaled the recipe down to 6 servings. I omitted adding any salt. Insted of whole tomatoes I just used Hunts fire roasted diced tomatoes. In place of using corn and bean I choose Premium Selections Grande Black Bean and Corn salsa available at Kroger. I added a tad more salsa and a bit more chili powder. After the soup was finished we added some shreded taco cheese as a topper and some mild jalapeno peppers for more kick. Loved it, will make it again!
