Cream Puffs

These turned out perfectly. I made the pudding with half and half (although after filling the cream puffs I had a lot of pudding left over--next time I'll just make one mix). The dough came together nicely. I made 16 cream puffs so they're slightly bigger. They were done in 21 minutes using parchment paper to cover the pan. I followed another reviewers advice and used a toothpick to poke a hole in the side of each cream puff immediately after pulling them out of the oven. Then allowed them to cool on the pan. This worked pretty well, I only had one deflate on me. Great recipe. Thanks for sharing.

Ricotta Bread

I loved it. Last week I made manicotti and had some leftover ricotta cheese. This was a perfect way to use up the surplus. The bread is extremely soft and dense (when I turned in over onto the cooling rack, the weight of the loaf squished the top in a little bit). Fantastic flavor. Just as rich as a pound cake but much less sweet. I've just been eating it plain but I'm certain it would be amazing lightly toasted with some raspberry jam.

Shepherd's Pie VI

Loved it. I followed someone's advice and used brown gravy mix instead of beef broth. I also bought a bag of frozen peas and carrots to make it a lot easier. I just microwaved the frozen vegetables and drained the excess water before laying it in the pie.

Fluffy Pancakes

A lot of pancakes call for buttermilk--but buttermilk is something I don't go out of my way to buy and never have a ready supply on hand. Therefore when I decide on a cold winter evening that it's going to be a breakfast for dinner night, I can't make the buttermilk pancake recipes. The milk combined with the vinegar in this recipe makes this just as good as any buttermilk pancake I've had over the years--and better I say because it comes from common household ingredients. Thanks for the recipe.

Downeast Maine Pumpkin Bread

The first night I tried this I didn't like it at all. The flavor of the ginger was way too prominent. I tried it again after three days and all the flavors had blended together nicely. I will make this again but definitely give it a few days to sit before cutting into it.

Southwestern Egg Rolls

These were great. I left out the spinach and used wonton wrappers instead of tortillas. I would have gone for egg roll wrappers but the grocery store was out of them. It pairs nicely with ranch dressing.
