Baked Chicken

Actually, it's more like a 4.5. This was really good--I think it could be better if I'd used more spices like other reviewers suggested. I used four boneless skinless chicken breasts and baked them for 40 minutes. Everything came together nicely.

Southwestern Egg Rolls

These were great. I left out the spinach and used wonton wrappers instead of tortillas. I would have gone for egg roll wrappers but the grocery store was out of them. It pairs nicely with ranch dressing.

Cream Puffs

These turned out perfectly. I made the pudding with half and half (although after filling the cream puffs I had a lot of pudding left over--next time I'll just make one mix). The dough came together nicely. I made 16 cream puffs so they're slightly bigger. They were done in 21 minutes using parchment paper to cover the pan. I followed another reviewers advice and used a toothpick to poke a hole in the side of each cream puff immediately after pulling them out of the oven. Then allowed them to cool on the pan. This worked pretty well, I only had one deflate on me. Great recipe. Thanks for sharing.

Fluffy Pancakes

A lot of pancakes call for buttermilk--but buttermilk is something I don't go out of my way to buy and never have a ready supply on hand. Therefore when I decide on a cold winter evening that it's going to be a breakfast for dinner night, I can't make the buttermilk pancake recipes. The milk combined with the vinegar in this recipe makes this just as good as any buttermilk pancake I've had over the years--and better I say because it comes from common household ingredients. Thanks for the recipe.

Crustless Spinach Quiche

I used one cup fat free cottage cheese, one cup spicy pepper jack, and one cup low-fat Italian blend for the cheese. I thought it was really good. The only place I like spinach is in a quiche and this is a much healthier option than the kind with the crust.

Best Baked Chicken

I used fresh garlic instead of garlic salt and opted for a low-sodium soy sauce. Chicken was moist and tangy. I will make this again--but next time I won't make extra for leftovers because the flavor doesn't hold up the next day.

Cabbage Fat-Burning Soup

This soup does exactly what it's designed to do--it helps you lose weight. I ate this for lunch 5 days in a row last week, ran 12 miles, and lost two pounds. The cabbage overwhelms the other flavors though--and I don't love cabbage so I'm going to make it this week without it.

Chicken Broth in a Slow Cooker

I'm giving this four stars to start. I made the recipe exactly as stated and I think I would prefer some of the other spice combinations instead of the basil in the recipe. Also, I started out with six cups of water and ended with about 3 1/2 cups of broth. Not sure why I lost so much liquid. Maybe the lid on my crock pot isn't very secure. Anyhow, next time I will try it with thyme, garlic, pepper, and a bit of salt instead of the basil.
