Chicken Tortilla Lasagna

Reviewed: Dec. 8, 2010
I really do love the idea of chicken tortilla lasagna, but I thought this was one of those recipes that is better without all of the extra ingredients. I also thought there were some ingredients that didn't stay true to the authentic Mexican taste I was looking for. Without the moz cheese, tomato sauce, and basil I would have given this recipe 5 stars. Also I changed the peppers to green peppers, cooked the chicken in olive oil onion and garlic powder, added Monterrey jack cheese, made the salsa chunky so I didn't need as many onions as called for and used flour tortillas instead of corn just because I like the smoothness of flour tortillas.

Simple White Cake

Reviewed: Apr. 20, 2009
Looooove it. I gave it 4 stars instead of 5 because it is a yellow cake (because of the egg yolks), and I used about 1 cup of buttermilk instead of 1/2 regular milk. I am not sure how the cake would of came if I had followed the recipe to a tee, but I also can't see why anyone would have a problem with this cake. It is just what it is titled "Simple White Cake" I love the texture and how moist it is. I made this cake with Fondant and butter cream frosting, and filled it homemade strawberry cream cheese filling. It was great. Thanks for sharing the recipe

Whipped Cream Cream Cheese Frosting

Reviewed: Apr. 20, 2009
I gave this recipe 4 stars because without the heavy cream the recipe by itself is great, but because I read all the reviews before using it and changed the amount of ingredients I felt I could not give it the full credit that it deserved. I have to agree, like many reviews before me who said the filling was way too water, I added 3 tablespoons of heavy cream only after I mixed all the ingredients. My grandfather always used to say (he was one of the best bakers I know) you can always add flavor and texture, but you can never take out. Also, since I was going for a filling and wanted a custard type filling. I used granulated sugar instead of confectioners sugar. I find when you use confectioners sugar the outcome is more of a frosting and not a filling. Over all my strawberry cream cheese filling came out wonderfully.

Buttermilk Pancakes II

Reviewed: Mar. 30, 2009
I loved the pancakes. I didn't give the recipe 5 stars because I needed to add more sugar. but even without the addition of sugar this recipe would have been great. I made about 7 pancakes and 8 waffles. The family loved it.

Cake Mixes from Scratch and Variations

Reviewed: Feb. 21, 2009
I have to say I really like this recipe. The reason I didn't give it 5 stars is because the end result came out more like a pound cake. I wanted my cake to come out more lighter and fluffy. Oh I also used oil instead of shortening. Though my cake did not come out as light and fluffy as I wanted I will just use this recipe for pound cake.

Mexican Rice I

Reviewed: Jan. 29, 2009
Very good - I added taco seasoning like it was suggested by previous reviews. I wanted this to be a one pot meal so I added left over chicken that I shredded, some peeled whole tomatoes, sweet corn, and red kidney beans and it came out great.

Easy Pie Crust

Reviewed: Jul. 29, 2008
I used this recipe to make calzones because I did not have any yeastand it came out great. The crust didn't take long to cook, it was not to cruchy or thin and it was perfect for my calzones. I can't say that I had a problem but I did add parm cheese and more flour to get a thicker crust. After this easy crust recipe I will no longer need to use any other recipe for my calzones.
