High Temperature Eye-of-Round Roast

I too was a skeptic but WOW...the best eye round I've ever made or tasted...moist, tasty, and tender! My roast was slightly larger (almost 5lbs)so I preheated and roasted to 500 degrees for 30 minutes. After that I set the oven to 170 degrees for the remainder of the time. The roast was a little more medium-well but still yummy. For seasoning I combined advice and coated with both olive oil and Kitchen Bouquet, rubbed generously with minced garlic and sprinkled on seasoning salt and italian seasoning. This will now be my go-to eye round recipe!

Cocktail Meatballs I

Wonderful easy recipe. I used frozen meatballs but otherwise used the recipe exactly as written. A big hit with my family and something I'll definitely make again!

Kyle's Favorite Beef Stew

My family LOVED this stew and I've already shared it with a friend! I wanted it to be really "saucy" so my modifications: doubled the amount of wine and added 2 cups of beef broth; only added one onion. I didn't need to add the additional flour/water in the end. Even with the extra liquid the stew was nice and thick. DELICIOUS!

We Be Jammin' Jamaican Banana Bread

Easy and delicious. Made a couple of substitutions out of necessity (margarine for butter, lemon for lime, spiced rum for dark, more rum/less milk) but they didn't seem to detract from the recipe. My family LOVED this bread and I'll definitely be making it again in the future!!

Traditional Hot Cross Buns

I usually have difficulty with yeast bread but found this easy to make. Perfect size recipe, only change was using all raisins because I couldn't get the currants. I also ended up doubling the icing...just like sweets!My husband really enjoyed these and I'll make them again, hopefully with currants this time : )

Chuck Roast with Homemade Noodles

Wow! I made this exactly as directed, except for throwing in some mushrooms that I had to use up. The roast was moist, tasty, falling apart and I was amazed at just how easy it was to make the noodles. They were delish...plenty for just my hubby and I, BUT I would definitely double when making for the entire family!

Baked Spiced Chicken

Very good recipe made easily with ingredients on hand. I had more chicken than called for so increased the recipe with no problem. A big hit with the whole family that I'll make again!
