I too was a skeptic but WOW...the best eye round I've ever made or tasted...moist, tasty, and tender! My roast was slightly larger (almost 5lbs)so I preheated and roasted to 500 degrees for 30 minutes. After that I set the oven to 170 degrees for the remainder of the time. The roast was a little more medium-well but still yummy. For seasoning I combined advice and coated with both olive oil and Kitchen Bouquet, rubbed generously with minced garlic and sprinkled on seasoning salt and italian seasoning. This will now be my go-to eye round recipe!
