Addictive Sweet Potato Burritos

Surprisingly awesome! Half the recipe. This makes a ton. I halved it and made 13 fajita wrap-sized burritos.... 2-3 each per person and we were satisfied. Follow the other recommendations: use black beans, a potato masher to half smash the beans when they're in the pan cooking with the onion, and less water. We actually used about 1/2 cup and tried broth for some added flavor. This is a wonderful healthy and satisfying meal. Perfect combo of salty, sweet, and savory!

Whole Wheat Carrot-Raisin Muffins

Good recipe! Following others' advice, I wanted to punch up the flavor; instead of pumpkin pie spice I used probably a TB of cinnamon plus 1/2 tsp or so of nutmeg and allspice. I was trying to make these as healthy as possible, so I reduced the oil to 1 TB melted butter. I didn't have any raisins so I substituted 2 small chopped apples; because apples are moist, I threw in a handful of oatmeal. BUT, the batter was so dry, I added another cup of yogurt. These seem like a lot of changes, but I followed the rest of the recipe and really appreciated the framework. They took 20 minutes to cook.

Golden Granola

Delicious. Love the low temp baking and the use of the stove top to melt together the sugars and oil. This is a robust recipe, meaning you can make it your own while following the method provided. I stuck fairly close to the recipe but didn't have coconut or sesame seeds, I also used less oil (1/3 cup). Really loved the crispy granola! Thanks for sharing this recipe!

Ooey-Gooey Cinnamon Buns

I assembled these, let them rise an hour or so, then stored them in the fridge overnight so I could bake them in the morning. Worked great!

Sweet Corn Muffins

Sweet and easy! Thanks so much! I didn't have shortening so I substituted butter - I softened it first and it worked great. I have a sweet tooth, but I took another reviewer's advice to reduce the sugar (I used 3/4 cup). Still very sweet and I can imagine a full cup would have been waaaaay sweet. Thanks Patty for a great easy muffin recipe!

Bread Pudding I

Mmm. Excellent. I used STALE french bread (we're talking hard-as-a-rock), so I used extra milk (close to 4 cups) and I added the melted butter to the egg/ milk mixture and poured it all over the bread rather than just the butter first. This helped the bread absorb the flavors more evenly. I used skim milk, and only 3 eggs, letting the bread sit for a good 30 minutes before baking until it puffed up. Delicious!

Banana Banana Bread

Fantastic! Most dense and banana-y bread around. I have made this recipe as muffins - fantastic. Just watch how long you bake 'em, as they cook faster than the bread. Also, I always add vanilla (about 1 1/2 tsp).
