Smoked Paprika Vinaigrette

This dressing is our new favorite. I was a little skeptical but decided to try it because of the ratings/reviews, the ingredients seemed like a strange combination. Our guests loved it, people are always in awe that we make our own salad dressings, they do not understand how simple it really is. We did not use the lime juice but it did'nt seem to need it. I did use a shallot instead of cutting up a whole onion. Our guests told us we should bottle it and we ended up dipping our bread in it because it was so good. It would be great as a marinade, I am going to try it as a coleslaw dressing, it would go great with BBQ.

Lemon Macaroon Tartlets

What a disaster this turned out to be. I followed the recipe for the macaroon part exactly (3/8 c of flour is a weird measurement, I wasnt quite sure how to measure it, maybe that's what went wrong). They did not bake into cups at all, they puffed up and filled the whole mini muffin tin, they would not come out of the pan and the texture/flavor was strange, luckily I had tried only a few the first time because the recipe did not say how long to bake them. I tried a few more with less of the macaroon mixture and used mini muffin papers, but they were still not right. Luckily I hadnt started the filling. This was a very disappointing recipe.

Super-Delicious Zuppa Toscana

This turned out great with a few minor modifications. I used pork sausages made locally that claim to be lower in fat, I used fat-free half and half and kale instead of spinach. My husband and his buddy loved it, it went great with the homebread I made. Next time I will add more potato, it didnt have quite enough.

Butternut Squash Bisque

Butternut squash soup is one of my favorite foods so I was excited to make it on my own for the first time. It turned out good but not great. DH said it tasted like carrot soup, I also used chicken base and water and it turned out too "chicken-ey". I added just a small amount of half and half at the very end but did not want to dilute the squash flavor. Next time it will be better, I wont use so many carrots and use less water. I roasted two squash at once and froze one for another batch, I will try again this weekend.

Chicken with Tomatillos and Poblanos

I found all of the fresh ingredients at the farmers market and wanted something different to try. I pulsed the tomatillos in the food processor instead of dicing them and used a chopped medium yellow onion instead of green onions. I also added about another cup of broth so it would be saucy enough to serve over rice. My DH loved it, I do not like peppers, but the chicken was good, the grown kids also loved it. It was labor intensive roasting the peppers and cooking the chicken.

Slow Cooker Split Pea Sausage Soup

This was a perfect meal for the first cold day of fall. Split pea is my DH's favorite soup and he said this was the best he had ever had. I only used 8 cups of water and used ham instead of sausage. I cooked it on low for 10 hours, the peas completely disenegrated, but it was the perfect texture. I used fresh garlic and chicken base instead of the cubes. Can't wait for leftovers at lunch tomorrow. I will be making this again and again.

Grandma B's Bean Soup

Very disapointed in this recipe. Love to come home to a crock pot of dinner, especially when I am coming down with a cold. Soaked great northern beans over night, followed recipe except added a about 2 tbs. of chicken base. Cooked on low all day, was not home to turn it from high to low. Came home so excited and it was blah, beans were almost gone, they were very mushy. No flavor what so ever, maybe it was the ham. Carrots and potatoes were also too mushy. Cooked it for 8 hours. It needed lots of salt and pepper to make it edible. Husband did not care for it either. The good rolls I bought to go with it ended up being most of our dinner. I will make my regular stove top recipe next time we want ham and bean soup.

Slow-Cooker Chicken Tortilla Soup

This was fantastic. Used raw chicken breasts (a little over 1 lb.). Added 1 extra can of broth and an extra teaspoon of both cumin and chili powder. Added a can of black beans for more substance, I think I will add some rice next time to make it heartier. Husband loved it, this will be a winter favorite!

Chili-Lime Chicken Kabobs

We made these for a graduation party and they were awesome. I did add the zest of one lime and went light on the cayenne. Marinated for about 5 hours. Everyone loved them.
