Red Velvet Cupcakes

Made this recipe for the first time last week to take to a dinner / get-together. Cut the recipe in half. Came out GREAT! Everyone loved them! My husband (not a big sweet / cake eater) asked that I make this recipe again. Definitely a keeper!

Roast Sticky Chicken-Rotisserie Style

Tried this recipe (the spice mix) yesterday for something different (while roasting the chicken as I normally would). It reminded me of the wonderful rotisserie chicken my dad used to bring home from time to time. My husband and 12 year old son agreed this is how we should season / roast chicken in the future. Honey Bun Cake I

Made this recipe once before as a bundt cake and receive rave reviews and requests for the recipe. Baked it yesterday for a bake sale but divided the recipe and made it using two 9 inch round pans. Used the mix manufacturer's recommendations for baking two rounds as a guide. Turned out beautifully!

Chocolate Chocolate Chip Cookies I

Made these cookies several times and typically use half white sugar and half brown sugar. Have used different extracts for flavoring (almond once, mint once with mint chips). Always get asked for the recipe.

Kickin' Collard Greens

I've never made collard greens before but thought I would give it a try after having them at a wonderful local restaurant. Took previous readers' advice by upping the slices of bacon a little, adding a "splash" of cider vinegar, adding a tablespoon of brown sugar and simmering for a couple of hours. My 15 year old son gobbled them up as did my husband who never had collard greens before. Great / easy recipe!

Cracked Sugar Cookies I

I've made this recipe numerous times for church events, bake sales, etc. After rolling dough into a ball, I roll the balls in sprinkles for a splash of color for the season or holiday. Loved by all (especially kids)!

Holiday Left-Over Sweet Potato Cake

Just made this recipe this morning. Based on previous reviews, used one cup white sugar and half a cup of brown sugar. Also used half a cup of natural applesauce instead of oil. Pleasantly sweet enough. Used a half cup of whole wheat flour with the remaining amount all purpose. Not heavy at all. Did not need to add the beer or any other liquid to thin the batter. Used an ice cream scoop to fill mini bundt pans (about cupcake size). Baked them for approximately 18 minutes. Great consistency. Lacked a little in taste without icing or powdered sugar. Will add nuts and/or raisins next time.

Healthier Apple Crisp II

Good recipe! Per other reviews, used brown sugar exclusively, doubled the cinnamon and added only half the water. Used a food processor for the crumb mixture using cold butter. No melting required! Made this with added craisins and with fresh cranberries for something different. Keeper!

Donut Muffins

Tried this recipe this morning for my son and his friends. Used half white whole wheat flour and half AP flour. Dipped the tops of the muffins in the melted butter / cinnamon sugar mixture. A hit! Think dipping the whole muffin and then rolling in cinnamon sugar would have been too sweet for us. Made 20 muffins using 1 level tablespoon of batter per mini muffin.

Amish Slaw

Made this for the first time today for a luncheon. Reduced the sugar to 2/3 cup and used red wine vinegar (based on previous reviews). Chopped green and red cabbage and added matchstick carrots. Turned out great! Forgot to add onions but I'm sure the onions would even make it even more flavorful.

Chef John's Classic Beef Stroganoff

Modified the recipe based on previous reviews and personal preferences. Added more onion / added a flour and water mix to thicken the sauce / used only 1/2 cup sour cream. Would have given it 5 stars if I didn't need to thicken the sauce. Otherwise, great recipe / easy to prepare!
