Polenta Fries

I gave 5 stars for the idea because we loved them so much!!! but i read the reviews and really changed up a bit, because i can't ever just follow directions ;) Made plain grits w/ just water, for breakfast one day, but made extra. After everyone had taken theirs, i stirred italian seasoning and lots of parmesan into the leftovers, then spread it onto a (clean) styrofoam meat tray to chill. Several days later i just cut into home-fry-sized pieces and baked at 450 on my baking stone. We had an emergency so i forgot and probably left them in 25-30 minutes, but they were great! really really crispy on the outside, tender inside! yum!

Creamy Yogurt Hummus

PERFECT!!! Really simple, so easy to customize. I read the reviews, used lemon only to consistency, drained yogurt overnight first. Doubled garlic and added a bit of coriander & cumin -- OMG to die for!!! This is the only hummus recipe i'll ever use! Can i give it 10 stars??

Teriyaki Onion Burgers

i had no probs that some of the other reviewers complained of -- doubled the recipe, not mushy or falling apart. added a bit of liquid smoke & worcestershire & garlic, as suggested by others. my husb will like these leftover as much as cold meatloaf!!

Pineapple Banana Bread

Yum! After reading the reviews, i tweaked it thusly (because i just can't follow a recipe to the letter!). Cut sugar to 1-1/2 cups (and i think 1-3/4 cups would have been better) and used a blend of white, light brown, and molasses. For flour, used 1-1/2 cups white, and 1-1/2 cups whole wheat plus oatmeal & flax meal; added a couple handfuls extra oatmeal to compensate for molasses. For oil, used a little of the pineapple juice, mostly coconut oil and a little olive oil. Used 4 black bananas & added toasted walnuts. Made in muffin tins. Yum!

Easy Greek Skillet Dinner

After reading the reviews, i tweaked a bit: while the pasta cooked, i matchsticked the carrots (so they'd cook faster) and started them cooking in the juices from (one can of fire-roasted tomatoes) (one can of mushrooms) (one large can of black olives). i used a lot of tuscan sunset seasoning (maybe 2T?). put in some pre-cooked ground beef from my freezer (maybe 3/4 lb?) and reduced the liquid a bit. then added the canned veggies & can of soup w/out the water. i only used about half the olives, and cut them in half. served w/ parmesan cheese, not necessarily greek anymore, but everyone loved it!

Aegean Chicken Salad

warning: my stars don't really count, 'cause i didn't follow the recipe! when i ran across this, i was looking for something gyros-flavored, so i changed it up a bit to use what i had on hand, and i forgot the lemon juice and the dang red peppers!! it turned out really good, but i measured nothing so sure couldn't make a "real" recipe out of it, so thought i'd share here. to a bunch of cooked shredded chicken, i added about equal parts of yogurt, sour cream, and hummus. added dill, coriander, cumin, onion & garlic powder to taste. black olives, diced cucumber, halved cherry tomatoes. the store didn't have pita (!!) so we used Arnold's sandwich thins. bagels would have been good too. wish i'd added lettuce; it would also have been good as chicken-salad-on-salad. thanks for the inspiration!! i was going to make hot gyros and it was way to hot a day to cook!!

Zesty Slow Cooker Chicken Barbecue

best bbq i've ever had! tasted just like from a restaurant. i'll never use plain bbq sauce again. i used cheap bbq sauce because it was what i had on hand. was a little concerned about how it'd turn out because of the other reviews, but it was still great!

Pasta Fagioli Soup II

I printed this out over a year ago and have used it so often i can make it blindfolded and my kids won't eat it anymore! LOL So after a long break i'm making a couple changes and trying it again. i've never used the bacon or the tomato sauce -- just don't have them on hand normally. they object to spinach (in the past i've used frozen chopped), so this time i substituted carrots and celery. i do have some fresh spinach that i'll add to mine! we're using tortellini as the pasta, and i'm making it in the crockpot. undecided as to whether i should eliminate the water, cook the tortellini separately and add at the end, or toss it all in there together. i usually do the pasta separately as it tends to get stew-y after sitting together overnight.

Gyros Burgers

OMG! *both* of my kids said this is the best meal i've ever made "since they were born", and even the pint-sized guest gave it exuberant thumbs up. kids had them on warmed pitas w/ lettuce, tomato, black olives and sauce from "sean's falafel & cucumber sauce" on this site; i had mine sliced up as a salad topper with the cuke sauce as dressing and my bread on the side. we used all ground turkey and i cooked them on the foreman grill, because i'm counting calories. amazing, delicious, YUM! i'll be making 5# of these for quick from-the-freezer meals. **update** just made a stroganoff version of this, using ground turkey for the meat. cooked the meat & spices up together ahead of time & froze loose, for serving reheated, spooned over egg noodles, stirred in yogurt & lowfat hummus, & topped w/ shredded cucumber. Yum!
