Fabulous! This changed our perception of what can be done with greens. My husband and I were speculating after dinner about whether we'd have liked greens as children if we could have had them prepared like this. We are both transplants to the south and neither of us come from a home where a recipe called for anything more than boiling greens till they were dead. I made many changes, but they were all subtle, I think. I have faith that this would still have turned out perfectly even if I'd had all the proper ingredients on hand. For the record, I used kale instead of collards, pork jowl instead of bacon, and a combination of leeks, chives, and a small onion where it called for a large onion.
