Chocolate 'N' Oat Bars

These bars are a huge hit at work! I don't bother with the top layer of oats. I don't measure the chocolate chips (I mean seriously, the more, the merrier) and I use pretzels instead of nuts.

Curried Coconut Chicken

The sauce was fantastic. We used chicken thighs and added cauliflower, potatoes and some other vegetables we had rolling around the house. I would have liked it to be a little hotter but the flavor was great.

Sweet Potato Bread I

Tomato-Curry Lentil Stew

This turned out great! We added pureed cherry tomatoes and shredded carrots because they were on hand and needed to be used. I agree with another reviewer that there isn't enough curry; I tripled the recipe and put in 3 tsp but I will probably do more next time

Mother's Applesauce Muffins

We loved these muffins! I don't have allspice on hand so I used a mix of fresh ginger, cloves and nutmeg. I always replace 1/3 of the white flour with whole wheat flour. I had to use maple extract because we were out of vanilla. Very good!

Cranberry Pumpkin Bread

I made this as muffins with a few small changes and they're great! I used 2 cups of flour and 1.5 cups rolled oats. I skipped the cloves and I used a splash of orange juice instead of orange zest. I also used 2 eggs instead of egg substitute. We'll definitely be making these again.

Pork Chops & Stuffing Bake

This is a great way to make pork chops. I've never had good luck cooking pork chops on the stove top so I'm thrilled to have found this recipe. I used one bag of plain dressing/stuffing. I diced half an onion, one carrot and one celery stalk and cooked them in a little butter. I added sage to the veggies and then mixed in the dressing. I mixed the dressing with 2 cups of chicken broth. I sprinkled the pork chops with Mrs. Dash and CONCENTRATED cream of mushroom. I did not mix the soup with milk and everything came out plenty moist. FANTASTIC

Pumpkin Chip Cookies

These cookies are fantastic. I used pumpkin pie spice in place of cinnamon. I also added raisins. Next time I think I'll try 3 cups flour and 3 cups oats. This does make a LOT of cookies though so you might want to cut this recipe in half.

Laura's Quick Slow Cooker Turkey Chili

We liked this chili. I thought I had chili powder and found out mid-cooking that I didn't so I subbed taco seasoning for all the spices. We also skipped the red pepper flakes because we don't like things too spicy. We used one can of tomato soup and one can of diced tomatoes with green chile.

Cheddar Cauliflower Quiche

Yum! We loved this quiche. We made it as written the first time. The second time we used half cauliflower and half broccoli and it was just as good. I forgot to turn the oven down the second time but still cooked it for almost 40 minutes. It actually turned out better because the crust was crunchier and the cheese got nicely browned.

White Bean 'N' Barley Soup

I don't usually care for soup but this was fantastic! I made a few changes... 1. soaked beans in cold water overnight (skipped the precooking step) 2. cooked soup in the crock pot on low all day 3. used 8 tsp "Better than Bouillon" and 8 cups water instead of broth and water I would have liked this soup to have less liquid and more barley. I will cook and add barley to the leftovers.

Zucchini Brownies

These were great. The flour stuck to the brownies too much so I think I'll just grease the pan next time. I used 1/4 cup prune puree instead of oil and 1 cup fructose instead of regular sugar. These brownies came out moist and delicious! Great way to use zucchini.

Blueberry Zucchini Bread

Very good! I changed it up by using... -1/2 cup "Lighter Bake" (prune puree) instead of oil (fat free but still good) -1 1/3 cup fructose instead of table sugar (lower glycemic index sugar but not an artificial sweetener) -1 cup whole wheat flour 2 cups white Next time I think I'll use raisins instead of blueberries because we LOVE raisins.

Mexican Whole Wheat Flour Tortillas

These tortillas were great. We used 1 cup of olive oil, 1 cup whole wheat flour and 4 cups all purpose flour (reversing the flour amounts). Easy to make and definitely worth the trouble.

Mom's Turkey Sausage Patties

I love this recipe! I like to add craisins in when I make them. We use half the meat but keep the spices the same - it makes for a spicy and tasty little sausage. Serve them with pumpkin waffles on Thanksgiving and Christmas.
