Beth's Portobello Mushroom Burgers

These were delicious and so easy to make! I would've never thought to combine the flavors of turkey bacon and mushroom, but my oh my was it tasty! The only change I made was to put mayo on the top bun and the horseradish sauce on the bottom bun. Will be making this again much more often because it's cheap, easy, and healthy :). Thanks for the fabulous recipe!

Easy Sugar Cookies

Amazing cookies but following the recipe exactly yields a too crumbly cookie mixture. MELT the butter first. I added 1/2 stick butter & 1 tsp vanilla to the original recipe for richer cookies.

Easy Meatloaf

My husband loved the recipe exactly as is, I'm going to have to make a few modifications next time I make it for me to enjoy it. I'll only use half an onion, chop it very finely, and saute it in some butter first. The onions were a bit overwhelming to me. The moisture of the meatloaf was really great though! The loaf needs a little more seasoning...will probably add some worcestershire and garlic powder and double to sauce on top. Husband suggested mixing some of the sauce in with the meatloaf mixture.

Candied Yams

Drained potatoes and mashed them, then mixed together with brown sugar, sprinkled cinnamon ALL over the sliced butter. Uncover for last 10 minutes to brown marshmallows (and add EXTRA marshmallows than recipe calls for). Delicious!!! This is my go-to sweet potato recipe :))

Spicy Black Bean Potato Salad

Simply wonderful. I made this for a bar-b-q and everyone LOVED it. Easy to put together and tastes very fresh, unique, and most of all- DELICIOUS! The only thing I will change next time is cutting the jalepenos up in little tiny pieces rather than slices and maybe use less. I had a few people say the bites with the jalepeno slices were a little too spicy for them :). Awesome recipe!

Best Green Bean Casserole

Used french style green beans, mixed in ALL of the shredded cheese and 3 oz. french fried onions with the green beans Sprinkle generously with garlic salt. No need to heat anything in microwave, just mix and bake. Bake at 350 degrees for 30 minutes uncovered, then add the french onions on top and cook for another 5 minutes. Delicious!!

Chicken Enchiladas V

AMAZING, with some modifications. Added all of the sour cream/soup mixture to the chicken mixture to stuff the enchiladas with. The chicken/onions mixture alone was way too dry without it. I then topped the enchiladas with a mixture of 1 can red enchilada sauce + 1 can cream of mushroom stirred together then poured on top. Sprinkled Tony's seasoning all over the top for a little kick, plus a little mozzerella cheese on top with the cheddar cheese. Me & hubby think these are the best enchiladas ever!
