Artichoke & Spinach Dip Restaurant Style

I made this for a Christmas party. There wasn't even a drop left! I used 8 oz. low fat cream cheese and I don't think anyone could tell. I also added an extra clove of garlic. Everyone raved about it and loved it! Served with homemade pita chips from this site. Excellent!

Pita Chips

I made these the other day with the restaurant style spinach dip also on this site. They were a huge hit. Even my sister who hates all chips loved them. I used rosemary and oregano, a little dash of onion powder and garlic powder and seasoning salt because I didn't have any garlic salt on hand. Very very yummy!

Bacon and Tomato Cups

Made these for a holiday party and actually forgot to add the cheese! No harm done, I guess I just cut the fat a little! I used green onion instead of regular and turkey bacon. I just cut up the bacon into small pieces prior to cooking so it would still get crispy. Everyone loved them! I doubled the recipe but left the mayo the same. Turned out great. Used a mini tart pan and a regular muffin pan. I think the small ones were cuter.

Fruity Curry Chicken Salad

I've made this a couple of times now and each time it is fantastic! I always use dried cranberries instead of raisins and red or green grapes. Either works. A little more curry doesn't hurt either. It isn't overpowering at all. Much better the next day after the flavors have marinated together. Delicious!

Chicken Florentine Casserole

This was alright. I think it is more like 3 and 1/2 stars. I was expecting more flavor. I did skip the first step like the other reviews have suggested. Overall it was a nice cozy meal and the presentation was pretty but I think it is missing some pizazz.

Phyllo Chicken Packets

These were really really good. Made with a friend for a small get together. We used pastry dough instead of phyllo dough so the covering was probably much thicker but it was still really good and much easier too!

Chocolate Chip Cheese Ball

This was a huge hit! Made it for a Christmas party. Alternated mini chocolate chips, red sugar, chocolate chips and green sugar for the outside. It was so pretty! Everyone wanted to know where we bought it from! I didn't use any nuts or put any chocolate chips in the ball itself, only on the outside. Very good!

Granny Kat's Pumpkin Roll

Made this for Thanksgiving. Was a big hit for a bunch of people who don't like pumpkin pie. Good flavor, not too overwhelmingly pumpkin. I did have some trouble getting it to roll up nicely but in the end it looked alright. I just have to work on my technique for rolling it up!

Never made snickerdoodles before but I've had the store bought kind. These were fantastic! So much better than store bought. Soft and chewy and delicious! Will definitely be making these again and again.

No Bake Peanut Butter Pie

Really really rich but super good. It was so yummy! Tasted like a peanut butter cheesecake almost. Put crushed butterfinger on top. Very very good but definitely not something to have all the time.

Fantastic! Was easy once you got the hang of it. Took a while to get a good one though. I used whole wheat flower and stuffed with leftover turkey, spinach, mushroom and jack cheese. Topped with a garlic cream sauce! Man oh man. Very tasty!

Cream Cheese Blueberry Pie

I made mini blueberry pies using a muffin tin and they turned out great. Not a single one left! Some people had thirds even. I used the Mrs. Snigg's Snickerdoodle recipe (from this site) for the crust, eliminating the last step of rolling them in sugar and cinnamon of course. I just pressed the cookie dough into a muffin tin and baked out some crusts. I also used slightly more cream cheese for the filling and since I didn't have any whipping cream used canned whipped cream for the filling. Still turned out wonderfully!

Chicken Flautas

I used flour tortillas and added black beans to the flautas. They were delicious! Baked for 25 minutes...might take longer if they are flour vs. corn? I didn't fry them either, I just sprayed them with pam and put them in the oven. Fantastic :)
