Sweet Dinner Rolls

These were a big hit at our Thanksgiving dinner. Everyone wanted seconds! I don't have a bread maker so I warmed the milk and water in the microwave for 1 minute 15. Added the yeast. Waited 10 minutes then added everything else (flour 1/2 cup by 1/2 cup) and mixed it all together. Let it sit for like an hour and then punched it down and rolled into 18 rolls. Delicious!

Depression Era Corn Chowder

Delicious. Added onion powder, garlic powder, a little rosemary, a chicken bouillon cube and some season salt instead of regular salt with the pepper. Really tasty.

Pretty tasty. Was harder than I anticipated to make the dough into perfect squares to seal nicely. Didn't save particularly well either. Still tasted pretty good though.

Doubled the batter and also added double the apples to the doubled batter and did not put in any nuts. Baked for 33 minutes in the oven. Used a coarse cinnamon sugar grinder for the topping. Delish.

Monkey Bread Muffins

Very yummy! Made biscuits using heart healthy bisquick and vanilla soymilk. Also used butter substitute and cut sugars slightly. Very good.

Overnight Raisin Oatmeal Pancakes

Easy OREO Truffles

these were the biggest hit of all my christmas treats! I doubled the recipe and used one package of peppermint Jo-Jo's from Trader Joes and one package of regular. They had a delicious, not too overwhelming peppermint flavor. Very yummy! Also used 1/3 less fat cream cheese. Didn't affect taste at all.

Empanadas

these were very yummy. they looked prettier with the cinnamon and sugar than the powdered sugar. I also recommend rolling them in the cinnamon sugar mixture before baking. I did both strawberry and raspberry jam. They were equally good. Also they do not fit much jam in them. It will start to come out. I recommend sealing edges with a fork to make them prettier.

Candy Cane Fudge

this was very easy to make. the hardest part was crushing all the candy canes. it took about 1 box of the dozen candy canes to give the right amount. warning this is extremely sweet but that is pretty much to be expected based off the ingredients.

Ricotta and Tomato Sandwich

Pretty good. Added the italian seasonings and garlic powder, as well as pepper to the ricotta before putting on the tomatoes. Very light and yummy.

Eggplant Rollatini

delicious! Used fat-free ricotta and spinach, mushroom, and garlic in the ricotta mixture. Broiled each eggplant slice under a broiler for 8 minutes on each side. Very good. Paired with tomato-cream sauce from this site and linguine.

fantastic! This was amazing. I can't even begin to tell you how good. I used only egg whites and didn't beat too thoroughly so that it was basically like a fried egg was on top of the bread...topped with maple syrup. Yum!!

Oma's Cottage Cheesecake

This turned out excellent. Used 3 eggs (egg whites only) and fat free cottage cheese and made sure to blend everything really well (at least 2 minutes). Turned out smooth and delicious. Covered it with blueberry sauce from this site. AMazing!
