Paleo Omelet Muffins

I first saw your recipe when our oldest was about to start kindergarten this fall. I made these then and have been making them since! I make a huge batch (16 eggs) and we store them in the fridge all week. These are perfect for my 2 year old to eat (dairy allergy) and so tasty. I even add chopped kale and spinach. I've seen some reviews saying to cook the veggies first or chop then super fine. I disagree, but I like my veggies crunchy and barely cooked, to retain more nutritional value. I will warn against not using baking cups. Even when sprayed really well, my muffin pan was a nightmare to clean.

Heavenly Potatoes and Ham

SOOO good. It's a family favorite! I love that it's simple. I don't even have to measure. I just dump in the ingredients until it looks right. I mix parmesan cheese in with the other ingredients and use italian bread crumbs on top. I also use white onion. For leftovers: Stir in scrambled eggs for breakfast!

Mom's Raisin Oatmeal Cookies

Basic but effective! My first time baking O.R. cookies. I read some reviews first and made the following adjustments: Added a bit more oatmeal and raisins, in addition to the oil, added 1/4 cup melted/softened butter, added a little more brown sugar, reduced temp to 350, watched baking closely...removed from oven when edges got dark brown. Tops looked as if they may not be cooked through but they were. They are great!! They're very soft and chewy, with the perfect amount of sweetness. Good job on a simple recipe!
