Pumpkin Cake Roll

Reviewed: Dec. 14, 2008
I made this recipe for my work thanksgiving party. It was a big hit; and it was gone well before the party was over. I was a bit intimidated by the process of putting the cake together as I had never made a cake roll before. However, it was much easier than it sounded. I made it the night before, and it was wonderful. There are a lot of steps but it was well worth the effort. Update (November 2009) I have made this several times since, and the only issue I've had is the cake sometimes cracks while rolling. I've started making extra cream cheese icing and just frosting the top; and even if you make a *huge* crack, nobody can tell.

Cranberry Salad VI

Reviewed: Dec. 21, 2008
My grandma used to make this every Christmas and Thanksgiving. I made it for the first time for Thanksgiving this year, and it was a big hit. However, I omit the mayo. It's not as shiny looking or as rich without it, but it is also lighter, fluffier, and slightly sweeter. I also double the whipped cream and use one 8 oz. can of whole berry and one 8 oz. can of jellied cranberry sauce.

Glazed Ham

Reviewed: Dec. 23, 2008
This ham was perfect! I made it for my work Christmas party last night, and out of a 13 lb. ham and 9 people, there is all of two pounds left. It was very sweet and smoky. I ran out of honey and used two tablespoons of molasses, and it was just awesome.

Broccoli Biscuit Squares

Reviewed: Feb. 18, 2009
My husband normally can't stand anything resembling a casserole. However, he liked this so much that he asked me to put the leftovers in his lunchbox in the morning! I didn't have cheese on hand, so I omitted the cheese. I added three strips of chopped, crispy bacon to make up for the oils in the cheese. I also happened to have some refridgerated, ready made biscuts, so I pressed them into the bottom of the pan after buttering them instead of making biscut dough. I lightly buttered the top of the dough and sprinkled it liberally with salt and pepper before adding the meat and broccoli. Thanks for this super easy entree!
