Exotic Brinjal (Spicy Eggplant)

This was my first attempt at Indian cooking and I have to say it was a huge success! This dish is absolutely delicious. Because I didn't have some of the spices on hand I used a good curry which I browned slightly in the skillet and the flavor was excellent. I did omit the oil using a nonstick skillet. I have to give this one 5 stars.

I have made this 4 or 5 times as a vegan option for fellowship at church. Everyone loves them! They are always gone before the doughnuts.

Wild Rice Stuffing Bake

I have made this twice now and everyone loved it, raved about it! I added cranberries both times for color but the flavor adds a nice touch too. It is so easy!

Mock Coconut Pie (Spaghetti Squash Pie)

Best Whole Wheat Chocolate Chippers

Very good. We too have made this our new Chocolate Chip recipe. I made the full recipe, followed the directions to the letter, they are great. I have put more than half in the freezer to use for Christmas.

Sausage-Stuffed Squash

OMG, Mary! This was great! I had a granny smith apple on hand and tossed that in to. Very easy. Just one tip. If you are using store bought squash, they are wax coated. When you boil them to peel them the wax sticks to anything you put in the water and is diffucult to wash off. Next time I'll use a wooden skewer to handle the squash.

Apple Pie by Grandma Ople

Great flavor and beautiful too. Everyone loved it. I made two, one to take to a dinner party and one as a treat for a friend. I think I may have cooked my "sauce" too long because it didn't bake down into the pie. I knew it but no one else did. I will defintly try again.

Beef Sirloin Tip Roast

I had 2 sirloin steaks on hand. Very easy to prepare and clean-up. Great week night dinner. I threw in some red potatoes and carrots. Very tasty.

Molasses Sugar Cookies

Great! I was planning to freeze these for Christmas but they are all gone. On top of that 3 people asked for the recipe. Very easy, followed recipe to a "T". Will defenitly make again.

Whole Wheat Banana Nut Bread

Very good. I did not have walnuts on hand so I substituted pecans. Next time I plan to try plain yogurt for the oil. I also doubled the recipe and it worked great. Mine did have to bake about 15 minutes longer. Will make it again for sure.
