Chocolate Chip Banana Muffins

Delicious! I was looking for a healthy PB-free snack for my kids at school, and these are perfect. We freeze each muffin individually and it's thawed in time for snack w/ very few crumbs. I subbed mini chocolate chips for less mess, half a cup of whole wheat flour for extra nutritional value, and melted butter for the oil. Very tasty!

Spinach Turkey Roll

This was easy to make and very good. Personally I'd prefer a bit more flavor - maybe adding some cheddar cheese to the mozzarella, more garlic, and some grated veggies? I ended up using more sauce than called for as well.

Iced Pumpkin Cookies

I found them a bit bland w/o the icing, and I didn't care much for the texture. Adding cream cheese frosting helped and adding mini-chocolate chips helped too.

Flourless Chocolate Cake I

This cake was fantastic. I baked it in a 9 inch springform pan (my 10 inch wouldn't fit in my roasting pan for the water bath!) and had to bake about 10 minutes longer than instructed, but that could just be my oven. Delicious, rich, and filling - I highly recommend. P.S. We couldn't wait overnight to eat it and dug in about an hour after it came out of the oven - still delicious!

Dessert Crepes

Fantastic and easy! A bit time intensive - only because I had only one suitable pan so could only make one crepe at a time. But the prep and actual cooking was a breeze, and this was my first time making crepes. The hard-to-please children loved them too!

Spinach Basil Pesto

This is a fantastic recipe. I followed it exactly and loved it. Even my kids and husband - who don't eat vegetables - loved it (I, of course, didn't tell them what was in it.) It is good as is, but it is also good with about 1/2 C cream (probably any dairy would work) added to make it creamier. I am making a second batch today!

Pinwheel Cookies II

Not enough PB taste for me. I was able to roll out dough fine on my baking mat (covered it w/ parchment paper and used rolling pin) and was able to carefully spread chocolate fine too. But the dough was too soft to roll up well. If I made again, I would add more flour and refrigerate PB dough first (although in fairness I live in high humidity and often have to add flour). Not enough taste for the amount of work in my opinion.

Chocolate Syrup

Easy and delicious, although mine tasted more like hot fudge sauce than Hershey's chocolate syrup - perhaps due to my cocoa powder (gourmet). Only complaint is that we were unable to use it to flavor chocolate milk - it never ended up tasting chocolately no matter how much we added. But as a sauce topping ice cream, brownies, whatever, it is amazing and definitely preferable to store bought.

Donna's Chocolate Zucchini Bread

I agree that it's not chocolately enough to be called chocolate zucchini bread, but I added some mini-chocolate chips and that seemed to do the trick. Also, I subbed applesauce for the oil, wheat flour for 1/3 of the total flour, and egg whites for eggs - healthier and still a big hit! Will definitely make again.

Awesome Sausage, Apple and Cranberry Stuffing

My favorite stuffing so far. I accidentally bought HOT turkey sausage, but it was still delicious. This will definitely become a Thanksgiving tradition. BTW, I cooked most of it separately in the oven - one hour was great. I cooked some of it in a pumpkin and it needed at least 1 1/2 hours (depends on size of pumpkin).
