Simple Sloppy Joes

We made a vegetarian version. We used 1 lb equivalent of soy burger. We cooked the garlic and onion until soft, then added the soy burger, cooking and breaking it up, added the rest of the ingredients. The soyburger soaks up more than regular burger, so at the end of cooking we added another couple of spoonsful of ketchup and a couple of tablespoons of barbecue sauce to taste. Easy, quick, and a great Friday night meal. Thanks!

Traditional Hot Cross Buns

I made the dough in my food processor. I had to add a bit more flour to get the right consistency (but I live in a humid climate, so that's normal.). I let the dough rise abou 90 minutes on the first rise. The buns had a great texture and taste. I will be using this recipenoften. Thanks.

Southwestern Lasagna

I used what I had on hand, which included canned tomatoes with chiles and I only had a large can of enchilada sauce and Pepper Jack cheese, so that's what got used. It came out beautifully and was really delicious. I will use this recipe often because it is easy, quick to put together, flexible and forgiving. THANKS!

Rich Italian Sausage and Potato Soup

I made a few ingredient changes because of what I had in my pantry. I used 3 slices of bacon in place of the pancetta. I used spicy Italian turkey sausage, and I used fat free half and half in place of the heavy cream. It still tasted rich and flavorful. Thanks very much.

Perfect Pressure Cooker Pot Roast

The only change I made was to use non-fat, low sodium beef broth. The roast came out perfectly. It's the first time I've made pot roast in my pressure cooker and I will be making this again.

Breakfast Casserole

I used Mexican Chorizo in place of the breakfast sausage. I followed the rest of the recipe to the letter. The recipe made just the right amount and was the perfect balance of flavors. This is a keeper.

Eggplant Stuffed with Lamb and Feta

This came out beautifully and it is delicious. The only change I made was to omit the bell pepper and double the onion (due to family preference). It was flavorful and fun. Perfect! THANKS!
