I tried to make jumbo cupcakes this weekend and I even purchased the Wilton jumbo cake papers. I didn't have a jumbo pan, but for some reason I thought I could just set the papers on a baking sheet, pour the batter in and bake! Very wrong! They overran into each other and it was a mess.
 
I have a mini bundt cake pan and I decided to improvise and try it. It worked perfectly and I didn't need the papers! Check out the photos! I think I am going to use my mini bundt cake pan for jumbo cupcakes from now on.
 
I used a white cake mix and added cherry Jell-O to it and I added store bought chocolate frosting. (Sorry,  my favorite chocolate icing is the store bought!)
 
I thought I would share my discovery!

I can only envision the mess you made w/the large liners on a baking sheet (kinda like putting under baked cakes back in the oven on a wire rack...:))! I'm glad they worked out for you! BTW-have you tried Chocolate Frosting II from here yet? I used to only like store bought until I tried that; now I'm a convert!

I love them in the mini bundt! Now I am going to go add one of those to my amazon wish list.

I will have to try the recommended chocolate icing. Thanks! Believe it or not, I found my mini bundt cake pan at Ace Hardware for $2.77. They have one left and I might go back and get it, they had them marked down at my store.

I love baking a wide variety of cookies, cakes and candies as baking is my specialty. I also have been branching out and making different dinner foods and bread. I enjoy grilling vegetables and bread.
My favorite family cooking traditions
My daughter loves to help me bake. My daughter is destined to have a love for baking and has her own apron, mini baking sheets, and cookie cutters. She helps me each and every time I am bake.
My cooking triumphs
I can temper chocolate and I can make caramels, I consider those my triumphs at the moment since it can be tricky to work with chocolate and caramel.
My cooking tragedies
I have been trying to make candy from scratch. I failed several times at trying to make the fondant for candy and truffle centers, I decided to put my candymaking book away for a while.
