I am watching Amazing Cakes on TLC as I type.
I am learned a lot from watching the bakers create these amazing cakes.
 
1.) Make a stiffer buttercream by using more powdered sugar to pipe around the egde of the cake and fill in with regular buttercream. The stiffer buttercream will help prevent the filling from squishing out when you stack the cake on top.
 
2.) To make the pretty chocolate ganache dripping down the side of a cake look, you make ganache that has a medium consistency and pipe it along the top edge around the cake. The ganache will gently fall down the side of the cake.
 
3.) You can use modeling chocolate in place of fondant.
 
I can't wait to try out these tricks I learned while watching Amazing Cakes. Hopefully I can put these tricks to use soon and take photographs. In the meantime, below are some photos of come cakes I made. I am not an extravagant decorator. I have a more simplistic style.

Beautiful! I don't bake very often, but I remember when you made the Coconut Poke Cake and I saw your picture, I had to make one too. I'm a coconut lover... the cake was amazing! Love all your blogs and pics!!!

You make beautiful cakes! I've tried and tried and tried. Mine never come out the way I want them to. When I try getting smooth frosting I get the swirled look, when I go for swirled I get...well I don't know what to call it but it isn't pretty! lol. At least they taste good :) I'll have to try the ganache thing I've always wondered how they managed to do that. Thanks!

I LOVE all of those cake shows! I am considering starting a cake/cupcake/cookie business. I have been making a few things here and there for school functions and bake sales, and they have gotten a fabulous response.

Rae, if you want smooth icing, one trick it to ice your cake and let it set out or put it the fridge for a little bit. Once the icing sets, you can take a smooth edged metal spatula and dip it into warm water, wipe the water off and smooth the icing. The heat on the metal will smooth it out better for you.

Rose, I love coconut too and I haven't made a coconut poke cake in a long time. I like scrolling back through older photos because I forget about some of the things I previously made.

Dear MSC, Look at all your beautiful cakes. I'm sure they tasted as good as they looked. I like to bake also. On another note do you have a baked ziti recipe that you would be willing to share?
