I decided to make some Pumpkin Spice Truffles the other day after browsing through all of the truffle recipes on AllRecipes. Most of them are either cream cheese based or ganache based. I decided to try a ganache based truffle.
 
I whipped up my ganache using Ghiradelli Bittersweet chocolate and heavy whipping cream. Once the ganache was made I added some canned pumpkin, Godiva Pumpkin Spice coffee, and lots of those fall pumpkin-y spices that many of us love and whisked away until I let it cool and firm up in the fridge while I ran some errands.
 
When I got home, I tuned into some good AM talk radio and began to dig into my truffle making. I used my small cookie scoop to scoop some truffle mixture into my hands. I had to work fast because the truffle melts in the hands quickly. I rolled them into balls and placed them on a wax paper lined cookie sheet. Once finished this with task, I slid them into the freezer to firm up while I got started on the chocolate coating.
 
I warmed some Ghiradelli 60% cocoa chocolate to 115 degrees and let it cool down to 84 degrees. Once it cooled, I warmed it for a few second up to 86 degrees. I enjoy tempering chocolate and even more the taste and that crisp dry chocolate shell that requires no refrigeration to harden it.
I piped some white chocolate on some of the truffles while leaving some without. I have 6 or 7 truffles that I didn't have enough chocolate for so I rolled them into dark cocoa powder mixed with cinnamon.

These sound scrumptious since I'm on a pumpkin spice kick right now! I'd love to get your recipe for these and the chocolate shell surrounding the truffles sounds fantastic! Great job, MSC.

Those look so good! I was hoping you were going to post about them when I saw them the other day. By the way- the new pictures you posted of Alexis are gorgeous!!! She has really beautiful hair too :)

they look great, I'm sure they will taste equally great. My aunt does the same thing with different liquers and a base chocolate for truffles, mmmm can't wait for Christmas

Lace, I will try to post the recipe sometime today. This is the first time I made them, so next time I may tweak the ingredients just to see what difference it makes.
