Veggie Pot Pie

Reviewed: Jan. 27, 2013
I am a diehard meat lover and honestly I wasn't excited about trying this recipe. Wow was I surprised. This was excellent if fact I couldn't stop nibbling on it, even when it was in the fridge. Each time I tasted it I was amazed how well it turned out and how flavorful it was... This recipe is fantastic hot, warm or cold!!... I followed the recipe as is except I forgot the cauliflower at the store so subbed in broccoli which I had. I did up the cornstarch. The reviews varied from 3 - 5 TBSPS so I went with 4 TBSP. Wasn't runny at all. Oh, and, I cheated using a store bought crust. I wasn't expecting much like I said and didn't want to invest the time. Next time I will make the crust and will make smaller pies. This recipe makes tons. I made one pie and froze the leftover filling in smaller portions. One final note: I am lactose intolerant and have been searching for a recipe to satisfy my craving for comfort food....I've found it.

Spicy Orange Beef

Reviewed: Jan. 27, 2013
Excellent recipe! I 1/2 the recipe but am sorry I did. I loved the result and wish I had more leftovers. The only varations I did was to use Apricot Jelly instead of the Marmalade since that was the closest thing I had in the house. When I finished with the orange peel it seemed like so much so I only ended up using half of what the recipe called for. Oh, and I didn't have Sherry so replaced it with juice from the orange. Of note, when I initally ate it I didn't notice much heat from the red pepper flakes and was thinking I should have added more... BUT... the heat was more prominent with the leftovers. I actually preferred it reheated. I definately want to try this with chicken and think it would be equally as great on meatballs.

Ruth's Grandma's Pie Crust

Reviewed: Jun. 15, 2011
Excellent recipe!! I used this recipe when making a rustic style berry pie. I wanted a substainial crust so I made it thicker than a standard pie crust and it turned out perfectly. Family commented on how light the crust tasted. A no fuss five star recipe. Will continue using this one.

Double Layer Pumpkin Cheesecake

Reviewed: Oct. 9, 2010
YUM! I made this for Thanksgiving dinner. It was so easy and wow was it good. Everyone wanted to take seconds home and I had multiple requests for the recipe. I took the advice of others and used pumpkin pie filling. I also placed it on a cookie sheet with some water and it turned out perfect. I served it with real whipping cream on the side, and it really didnt need the whipping cream. The pumpkin flavor wasn't that strong and I think next time I will experiment with the amount of pumpkin. My advice to others....make a couple because your guest will want more and it would be a sin to not have any left over for yourself!!

Yummy Sweet Potato Casserole

Reviewed: Oct. 9, 2010
I'm not a huge fan of sweet potatos/yams but other member of my family are. I made the recipe according to the instructions except I did roast the sweet potatos, opposed to boiling them. I also baked and mashed them in advance and refridgerated them. The next day I brought them to room tempature and carried out the recipe. My guests raved about them and wanted to know "my secret".

Cocktel de Camaron

Reviewed: Jan. 1, 2010
Intrigued by the orange pop and ketchup mixture I had to try this recipe. I don't know if "bunches" of cilantro are a different size elsewhere, but I used under half a bunch and it was overwhelming.

Eggs Benedict Breakfast Pizza

Reviewed: Jan. 1, 2010
This is a fun twist on regular eggs benedict and much easier to make for a group then the standard eggs benedict. It is very filling and is great idea for a quick dinner. My kids love this! I like it but I'm not sold on the cresent crust. I feel it overpowers the other flavors. I took the other's advise and precooked the crust and only baked it for 18 minutes. I will be making this on a regular basis but will try alternatives to the cresent dough and will add additional hollandaise on top of the eggs before the cheese. Update: I have tried various alternatives to the cresent roll crust because I just couldn't get past the flavor of it. Recently I made the recipe using Pilsbury Pizza Dough and it made all the difference in the world! Everyone preferred the pizza dough option. I used the pilsbury directions for baking the crust. Bake for 8 min, remove from oven, add toppings and then bake for additional 14 min. I also used only 6 eggs and it was just right.

Black Hills Golden Egg Bake

Reviewed: Jan. 1, 2010
I make a different egg dish evey Xmas for breakfast and until now had not found one I liked enough to use again. This one I will be using again and again. My adult daughter who doesn't care for, or eat eggs normally and absolutely hates cottage cheese liked this dish...... so that alone says something. I have made this as per the instructions and have also made it with ham and mushrooms. Both great!

Tiny Pecan Tarts

Reviewed: Jan. 1, 2010
This is a keeper! Making the little tarts with the dough was time consuming especially for someone like me that rarely bakes, but it was worth every minute. The dough/shells are wonderful. I intend to use the shell recipe for all tarts I make from this day forward. I took other's advice and made half the filling and ended up short but only by 1 tart. These were extremely popular and would make a very nice addition to tins of baked goods given as gifts. I will make the effort to make them more regularly!

White Chocolate Party Mix

Reviewed: Jan. 1, 2010
This mix is rather unappetizing to look at but it is great tasting. I made this thinking my small grandchildren would like it...cereal + candy + white chocolate... can't go wrong but to my surprise it was even more popular with the adults! I used Crispix, Cheerios, Pretzels, Cashews and Xmas M&Ms which gave it a festive flare. This will become a standard treat at Xmas from this point forward.

Peanut Butter Cup Cookies

Reviewed: Jan. 1, 2010
Both my kids are huge peanut butter cup fans but I got mixed reviews on the cookies. One loved them and the other said they just tasted like peanut butter cups which I tend to agree with. I felt it was alot of work and there just wasnt enough of a contrast in taste between these and plain peanut butter cups. I took the other's advice and froze the peanut butter cups. I also waited a few minutes for the cookies to sink before inserting the peanut butter cups and had no issues with cracking. Perhaps it was my pan but I did have difficulty getting them out of the pan once cooled. Ruined several during the process.

Broccoli Chicken Roli

Reviewed: Jan. 1, 2010
This was quick and easy and my kids loved it. I had to omit the onions and peppers beacuse my son hates them so I just added a little more broccoli to compensate. Next time I will make 2, one for adults with onions & peppers and 1 for kids. I did find that the crust tasted overcooked so next time I will adjust the temp and cooking time. My son suggested to add bacon so I'll try that next time
