Ultimate Shrimp Scampi

Anything with fresh shrimp is tasty. If this was just a way to cook shrimp, it'd get my stamp of approval. But the utterly insane amount of butter in this made the idea of sauce impossible.

Pecan Oven-Fried Fryer

This recipe makes deliciously tender chicken. I usually end up drowning meat (especially chicken) in BBQ sauce to add moisture; this is one of those rare instances when BBQ sauce was not only unnecessary, but detracted from the flavor and crunch of the pecan/buttermilk crust. I only made a couple changes. 1) I let the meat sit in the evaporated milk for a few hours. 2) I didn't drizzle the butter at the beginning; instead I lightly rubbed about 1/3 of a softened stick over the top of the chicken about 10 minutes before it was done. In the future, I may try replacing the paprika with 1 1/2 T Cajun seasoning to increase the tang.

Mashed Sweet Potatoes

These were great - the key is to slowly add milk until the potatoes get the right consistency. The skins can be left on, they blend into the mixture well. I also added cinnamon, nutmeg, and salt to taste.

California Grilled Veggie Sandwich

Great sandwich recipe - I used spreadable garlic and basil goat cheese (Chavrie) instead of the mayo & feta, which I thought was both redundant and potentially crumby. No focaccia either - sourdough was a great substitute.

Meatiest Vegetarian Chili From Your Slow Cooker

Absolutely delicious - REALLY spicy, the mention of guacamole and sour cream is not really a suggestion. The chili had a great full body and did not seem too watery. A couple minor changes/substitutions I made - 1/2 less onion, 1/2 T of red pepper powder instead of Tabasco (I was out), 1 can of kidney beans instead of black beans (again, I was out). Even my carnivorous fiancee approved.
