Roxie's Bran Muffins

These are healthy and delicious! I substituted soy milk for the cow's milk, blueberries for the raisins and used 1 tbsp vegetable oil + 1 tbsp applesauce instead of the butter and they turned out great.

World's Best Lasagna

To make this a vegetarian dish, I substituted the beef with veggie crumbles. It turned out fantastic. I took it to a dinner party and nobody could believe it was vegetarian; they thought it contained a real meat sauce.
