Chef John's Lemon Bars

Just made these and they are awesome! My family (1 husband and 5 kids) love lemon bars. I normally do not...but I do love these! A lot of lemon bars I've had just taste kind of bland but not these, just a pure wonderful lemon flavor.

Roasted Brussels Sprouts

Like other reviewers, I too baked these at 425 degrees for only 15 minutes and they turned out wonderfully! I kept the oil and seasoning the same and just rolled the sprouts around on a bowl with them before pouring them out onto a baking sheet. To ensure even cooking, I took the "lazy approach" and just baked them for 7-1/2 min on the middle rack and then switched them to the bottom rack for the other 7-1/2 min. Terrific taste!

Flourless Chocolate Cake I

Honestly it was great! I did everything a reviewer named Wendy (2006) did, i.e., no water bath and use a springform pan, etc. and it turned out fabulous! Even the pickiest chocolate snobs here loved it! So read Wendy's review and do what she says and it will be perfect!

Asian Chicken Salad

I like a previous reviewer, used broken Ramen soup noodles instead of rice ones. I added canned mandarin oranges. To the marinade/dressing I added ground ginger and some black pepper, cut the oil amount in half, kept the sesame oil(!) and used about half to marinate the cooked chicken cubes. I also added sugared almond slices. (1/2 cup sliced almonds and 2 tablespoons sugar cooked on low and stir to coat - keep an eye on 'em). Yum!

Mom's Favorite Meatloaf

My family loved this recipe -- it fed two adults, one teen, and 4 children with leftovers!! They hate any kind of "chunks", i.e., onions, green peppers, so onion soup (I just put onion powder and a bit of beef boullion bits in it) is great. I added garlic powder and salt and pepper as well, and only had "Ritz" type crackers on hand - but was really good. Update: made this again recently. Instead of the dip mix I used garlic powder; onion salt; seasoned salt (maybe 1/2 tsp each of salts). 2# ground beef (no sausage); same amt eggs; 1/2 cup or so italian bread crumbs. It was the most flavorful meatloaf we've ever had. Update again! Made meatballs that were awesome!! using orig recipe with my corrections!
