I LOVE this carrot cake but since I don't like my cake too sweet, I down the white sugar to 3/4 of a cup and use 1/2 of brown sugar and 1/4 white sugar instead of all white. On the frosting, I only use 1 cup of confectioner's sugar instead of 4, and I still find it a tab sweet, so next time I probably only use 3/4 cup instead of 1. And cut the butter to about 1/3 or even 1/4. Since I have an electric oven, I don't think it needs 30-40 mins, probably 25 should be plenty. Will def make it again soon!!
