Delicious Ham and Potato Soup

Good hearty soup. I used only 1 TBSP of bouillon and did not add the salt. I wanted it to taste like ham, not chicken. I also added a few carrots for color and nutrition. 3 TBSP of butter is also plenty if you're trying to cut calories.

Chicken Ranch Enchiladas

Delicious! I used salsa instead of green chilies and cheddar cheese instead of the Mexican cheese blend. I thinned out the sauce to pour over the top with some milk. My whole family enjoyed them!

Bow Ties, Zucchini, Carrots, and Chicken

Wonderful flavor! I added corn starch to the sauce to thicken it up. Less butter can be used in the sauce to make it a bit lighter. The parmesan cheese might be better sprinkled on top because it didn't completely melt in the sauce and was clumpy. With these changes, I'll definitely make it again.

Delicious! Adding sugar to the fruit is not necessary. I used a reduced sugar strawberry jam and it was wonderful. I also tossed in some blueberries for added flavor and color.

To Die For Blueberry Muffins

These looked nice, but didn't have that "to die for" taste. I might try using the brown sugar topping as suggested by others. The original crumb topping is way too much, it could easily be halved.

These cookies had great flavor, but the texture wasn't my favorite. I prefer a moist and chewy cookie. These cookies were a bit dry, but good with a glass of milk.

Outrageous Chocolate Chip Cookies

These were good, but next time I'm going to reduce the peanut butter and add more oatmeal. The PB flavor overpowered the cookie. There is no need to grease the cookie sheet, the cookies have plenty of fat in them, so they don't stick.

Creamy Rice Pudding

Yummy! It took about 25 minutes for the rice, sugar, and milk mixture to get thick and creamy. I used brown rice instead of white and it was really good.

Incredibly Cheesy Turkey Meatloaf

Good basic recipe, but I changed it a bit to my liking. I reduced the cheese, but think I will eliminate it next time - it really isn't needed and just ups the fat content. I also used crackers and italian seasoning instead of bread crumbs. I added in 4 ounces of carrot puree, some onion, and a couple splashes of worcestershire sauce as well. It was a hit with my family.

Applesauce Cake I

With all the applesauce in this recipe, I had hoped for a moister cake. It also seems to be lacking a bit in flavor, I might try adding more cinnamon or some allspice. Cream cheese frosting on top is yummy!
