Cream Cheese Frosting I

I made it as written and thought it was a little runny, so I added the rest of the brick of cream cheese (for a total of 8 oz) and added 1/4 cup of powdered sugar (to bring it to 2 cups) and it seemed a bit sturdier. It still spread a bit when I frosted the cupcakes, but it tasted decent. Not my favorite cream cheese frosting recipe, but certainly not the worst.

Pecan Crackers

These were okay. I thought they could use more flavor. I'd do 1.5 times the sugar/butter mixture so they're thoroughly coated, and definitely don't leave them in for 12 minutes, unless you're doing it at a lower temp. My friend makes something similar but uses Saltines instead of graham crackers, doesn't use nuts, and puts chocolate chips on as soon as it comes out of the oven, spreading them once they've started to melt so it's a pretty smooth layer of chocolate. Wicked good that way; so-so when done the way this recipe's written.

Microwave Corn on the Cob

Simple, quick, energy-efficient, and delicious! These came out perfectly crisp (as opposed to mushy) and fully cooked. Even when it's not hot and humid, I'll go with this method, as it's better for the environment and for my energy bill and it's so much faster and less messy than the stovetop method! Thank you!

Pecan Cardamom Bar Cookies

These are pretty good, but the cookie portion was not nearly as good as I was expecting based on other reviews, so perhaps I did something wrong. I used over 1 cup of pecans and that was just about right. In the future, I'll add a bit more cardamom (I really like it) and maybe a pinch of cinnamon, and will use orange extract instead of vanilla extract in the icing.
