Campbell's Kitchen Beef Stroganoff

This is a quick way to make beef stroganoff on a busy night but the taste is the tradeoff. This is passable, and I may return to it when I have a craving but don't have much time, but it lacks the depth of flavor.

So Simple Beef Stroganoff

This was pretty good. I used chive & onion cream cheese for an extra boost. I still prefer the real beef stroganoff, but for a weeknight or potluck, this is a quick, satisfying meal, though obviously loaded with sodium from all the processed products so expect your pants to be a bit snug the next day!

Luscious Spinach Artichoke Dip

I am terribly disappointed. I love spinach artichoke dip, but this was a thick, blah mess. Even not rinsing the artichokes (unlike many of you, I like the acidity of the canned artichoke), it lacked flavor and was somehow dry and not creamy, despite all the sour cream, mayo, and cream cheese. I will not make this again.

Sea Salt Caramel Brownies

These brownies were polished off in a few minutes at a tailgate! I swirled the caramel sauce a bit as "drizzling" it seemed ineffective. The only changes I made were to the box brownies (I use coffee instead of water and add a few T. unsweetened cocoa), as I think it brings out the chocolate flavor more deeply. I highly recommend swirling the caramel sauce and sprinkled salt into your next batch of brownies!

Potato Latkes I

As written, I give it three stars. It has way too much egg and not enough onion. If you reduce it to just one egg (two at the absolute most), double or even triple the onion, and use matzo meal or panko instead of flour, you'll have a winner.

This was wayyyy too sweet and I did not care for the mix of beer and coffee. One or the other might be good. I had several others taste it and they liked it a tad more but all agreed it was too sweet.

Chickpea Salad with Red Onion and Tomato

Best Chocolate Chip Cookies

For the first time in my life, I threw out chocolate chip cookies. I followed the recipe exactly but these cookies were much too hard to eat. After the first batch seemed overdone (though I took them out when they started to brown as usual), I took others out even sooner. Once cooled, every single one was hard as a rock. I'll stick to the butter Crisco or Nestle recipe, both of which make cookies I can eat.

Kalamata Olive Tapenade

As written, this tapenade is very good but *very* acidic, so I deducted a star. The second time, I reduced the lemon juice to less than 1/2 teaspoon and it was still more than tangy enough for me. I do not think salt or pepper are needed, but did not deduct any stars as that is written "to taste." I served it on crostini, with a slice of tomato and some feta, and it was delicious. Next time, I may try a bit of cream cheese on the crostini before I spread on the tapenade, or I may just do half kalamata, half black olives. I definitely recommend it, although I would suggest reducing the lemon juice unless you are using a mix of kalamata and black olives.

Cranberry Orange Loaf

I originally gave this recipe 3 stars, based on how it tasted soon after it cooled, but I have to bump it to 4 stars now that I have tasted it the next day! For my second time around, I will follow the advice of those who suggest cutting the cranberries (it's just too big a punch) and I will add the glaze as it does seem like it could use that added dimension. With refining, I think it'll be a 5, but it's a 4 as written.

Apple Bread

I was extremely disappointed by this bread. Even after adding some applesauce to add moisture and thin the super-thick dough a little, the bread was very dry. The flavor is good, though a bit sweet, but it is impossible to focus on the flavor when it is so dry.

Basic Corn Muffins

If you are serving these as a meal, the sweetness is right on. If these are for breakfast, I'd suggest increasing the sugar to 1/2 cup or even a bit more. These are far from spectacular, but are decent.

Orange Crunch Cake

The cake itself was good, but I will cut the crunch layer in half if I make it again. I found it to be much too thick. I made a cream cheese frosting with vanilla, orange, and lemon extracts in it, and the flavors went together quite nicely.

Easy Crescent Danish Rolls

I have made these twice now. I would suggest reducing the cream cheese mixture by about 25% (so 6 oz (3/4 brick) cream cheese, 1/3 cup sugar, 2 tsp lemon juice) and adding about 2 T jam to the mix (still put some on top). I made it as instructed the first time and thought that it was way too cream cheesy, and the filling exploded. With less cream cheese filling and some of the fruit flavor mixed in, they came out much better.

Cherry Pie IV

I should note that I used my own crust recipe so this rating is strictly for the filling. Wow! Absolutely delicious! I made this at Thanksgiving, for those who are not big fans of pumpkin pie, and this was gone in a matter of minutes. It was expensive (I used canned pitted sour cherries, which were over $3.50 for each of the 3 jars I needed), but worth every penny when I tasted it.

Best Cream Of Broccoli Soup

This was pretty good as listed, but I like my cream of broccoli a bit saltier, thicker, and creamier. I made the following changes the second time and found it much more to my liking: 1) Toss about 2 teaspoons minced garlic with the onions and celery. 2) Instead of broth, use 3 cups water and 5 bouillon cubes, so it's saltier without being more watery. 3) Do not puree the soup. Instead, chop the broccoli, about half finely and half roughly. That way it cooks faster and has some texture without huge chunks. 4) Increase the roux from 3T/3T/2c to 6T/6T/3.5c.

Chipotle Blue Cheese Dip

Neither my roommate nor I liked this. We both love spicy things, but the tastes just did to seem to complement each other. If I try it again, I'll try it either with no adobo or with a different kind of pepper.
