About this Cook
I like to be creative with recipes and substitute ingredients for what I have on hand.Usually, I have good results. I tend to stay away from recipes that have too many ingredients. I enjoy reading suggestions from other reviewers, lots of good substitutions have been found.

My favorite family cooking traditions
My mom was a great cook, especially of East Indian food,but unfortunately her skills were not passed onto me. Somehow, she managed to learn to make a great variety of ethnic dishes and also traditional British food.Don't know how she did it, as I never saw her use a cookbook. She cooked with pride and love.

Ratatouille
I don't like eggplant so I substituted one butternut squash instead.Didn't have any mushrooms on hand.I used one 28oz can of diced tomatoes instead of fresh.Came out great and not too much liquid, probably because I didn't use the mushrooms. I caramelized the onions on the stove before adding to the rest of the mixture.I think it is important to do this. I did not layer the dish,I just tossed everything into a huge mixing bowl before pouring it into the casserole dish and it came out great. tasted even better the next day. good with wild/brown rice.it would probably be very good even without the parmesan cheese. add lots of seasonings, if you don't have italian then just be generous add:basil,oregano,parsley,thyme,rosemary and lots of fresh garlic. I didn't find it to be bland at all. Next time, I'm going to substitute the squash for sweet potatoes and see how it turns out.

Black Bean and Corn Salad I
for an alternate dressing you could use: 1/4 cup of olive oil,2 tbsp red wine vinegar,1 clove minced garlic,1 tsp each of salt and ground cumin and 1/2 tsp each of black pepper and sugar.using 1/4 cup of fresh coriander really makes the difference.great with chicken or fish along with a simple rice.
