Key Lime Pie VI

This pie tastes like heaven. I can't have dairy, so I was searching for a key lime pie without condensed milk, and this is just what I was looking for! I used ginger wafer cookies from Trader Joes to make a crust, which paired well with the lime. I also used 1/2 c lime juice and no zest (just because I used lime juice I had frozen earlier), and it turned out perfect.

Luck o' the Irish Brownie

I thought this was pretty good. The reason I am giving it four stars instead of five is that I made a couple of small changes, and I think if I had made it as written, it would have been way too sweet. I made a half recipe, and used only 1 cup powdered sugar for the frosting. Also just used plain melted chocolate chips for the top layer.

Dairy Free Chocolate Pudding

I didn't care for this. I didn't have any trouble with clumping, but it came out quite thick. Not a pudding consistency at all. The flavor was also lacking. Not chocolaty or sweet enough.

Buttery Soft Pretzels

I thought these were good, but not great. I made the dough in my bread machine on the dough cycle, which made this recipe really easy. My main problem, though, is that they were just too sweet. I would use half as much sugar next time, and maybe bread flour for a chewier pretzel.

Garlic Lover's Pizza Crust for the Bread Machine

This pizza dough was great! The only thing I might do differently is add some herbs next time (oregano? basil?) just for some extra flavor. The texture was great, though. I recommend brushing the crust with a little olive oil and baking it with no toppings for 5-10 min, then topping it and baking until the cheese bubbles. I find that this ensures that the middle of the pizza is evenly cooked and the dough isn't soggy anywhere.

Green Chile Frittata

Hmm. I made this because I was trying to use up some cottage cheese in my fridge. It definitely had a different texture from the frittatas I am used to making- not bad, just different. I'm giving it three stars because I think it's a little bland as is. Next time I would add more veggies and definitely more chiles- I didn't feel like I could really taste them.

Chocolate Crinkles II

These are SO good! Slightly crisp on the outside, delicious and fudgey on the inside. Really like a brownie in cookie form...almost. I didn't have any problem with the dough being sticky or thin. I stuck it in the freezer for about an hour and a half and it was just fine to scoop. I used a medium sized cookie scoop and got 19 cookies from a half-batch. Also added some mini chocolate chips. Yum!

I only made a half batch of these and still got about 24 cookies. I'm glad I made a half batch, though, because I didn't think they were that great...I liked the texture a lot, but the flavor didn't do a lot for me. Too vanilla-y, for one. Think I'll stick to my usual chocolate chip cookie recipe!

Thin Mint Cookies

These were great-much better than the Girl Scout cookies! I ommitted 1/4 cup of flour and they were the perfect consistency. I didn't refridgerate them for as long as the recipe says; just an hour, and they were fine. I dipped the tops of the cookies in melted semi-sweet chocolate chips (about half the bag), and added about 1/3 tsp of mint extract to the melted chocolate, which I think really helped with the minty taste of the cookies. Also did not add the butter to the melted chocolate...didn't think it was really necessary.

Chewiest Brownies

DELICIOUS!!! We brought the cocoa powder down to 1/2 cup, and the sugar down to a cup. Also added a cup of dark chocolate chips (coated in flour first to keep them from sinking to the bottom of the pan), and then sprinkled dark chocolate chips over the top (about 1/2 cup) while the brownies were still warm, then spread them with a spatula once they had melted some. We also only cooked them for 25 minutes and they were perfect (probably because they are so thin in the bigger pan). - CHARLIE AND LEO!!!

Delicious! Substituted the lemon extract with a tablespoon of fresh lemon juice. Just the right amount of lemony flavor, and great chewy texture!

Cookie Sticks

My family liked these...I prefer a chewier cookie, and these were pretty crunchy. Had to bake for more like about 10-12 minutes- waaaay underdone at 6-7.

Mother's Applesauce Muffins

Good with a few changes- added cloves and nutmeg in addition to the allspice and cinnamon. Also added about a cup of shredded apple. Brushed the tops of the muffins (once baked) with a little butter, then sprinkled cinnamon and sugar on top.

Chocolate Chip Muffins

These were pretty good, but not great. I added just a splash more milk, a teaspoon of vanilla, and coated the chocolate chips in a little flour before adding them to the batter to prevent them sinking to the bottom.

Applesauce Bars

Everyone in my family loved these...maybe too much, as we could not stop eating them! My dad referred to them as "those square cupcakes." They really were delicious. I didn't have any pumpkin pie spice, so I substituted 1 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp allspice, and 1/2 teaspoon of nutmeg. Also baked them in a smaller pan, so they were a little thicker- had to up the baking time.

Glazed Apple Cookies

Great recipe! I forgot to add the milk the first time that I made these, but they turned out great, so now I leave it out on purpose. I have also made these substituting half of the butter with applesauce, and you could barely tell the difference...but they were a little healthier that way!
