Ann's Dirty Rice

Good start but missing a lot. I add ½ pound of andouille Cajun sausage, 2 stalks of celery, a few dashes for Louisiana Hot Sauce, 1 tablespoon Worcestershire sauce 1 teaspoon of dried parsley. I also saute the rice a little bit with the vegetables, before I add the liquid, to brown it a slight bit. A bay leaf is a nice addition and some thyme too, but not a must have, just adds lots of good flavor.

Baked Ziti I

I just made this and I blended a few recipes together to get what I wanted. I added a pound of Italian sausage to the ground beef and one green pepper, and some minced garlic. I added 1 table spoon sugar to the spaghetti sauce to cut down on the acid of the tomato sauce. I mixed in about a cup of small curd cottage cheese with the sour cream and added an egg to that. Then I mixed 8oz ricotta cheese with the mozzarella cheese and added an egg to that mix too. The provolone came in an 8oz package so I used all the slices I covered the ziti with foil and baked it for 45 minutes then I uncovered it and added about ¼ cup Parmesan cheese and ½ cup mozzarella to the top and baked it another 15 minutes. Then I let the whole thing rest 20 minutes before serving.

Pineapple Upside-Down Cake V

I liked this and it was pretty easy to do. I used a whole stick of butter, ½ a stick in each pan. I added coconut to the bottom layer too. I also put some pecan halves on the top layer before I laid down the coconut layer. I was going to use a regular yellow cake mix, but I saw a pineapple flavored cake mix, so I used that instead. In my oven they were done in 35 minutes not the 40-50. I did not let it sit 20 minutes before turning out. I turned them immediately. Next time I will make sure I spread the batter a little better as my cake was a bit lopsided. That is OK though it still tasted good :)

Au Gratin Potatoes II

We loved this dish. I made a few changes. I used cream of chicken instead of cream of celery, I could not find any at the store. I used frozen shredded hash browns potatoes. For the topping I used Panko Bread crumbs and shredded cheese instead of the corn flakes.

Slow Cooker Sausage with Sauce

Lemon Pound Cake

I liked this recipe. I made a few changes: I added a box of instant lemon pudding mix, a tsp of lemon extract, and some lemon zest. I then put a lemon glaze made of lemon juice, powdered sugar and butter.

The Best Oatmeal Cookies

This a great recipe. I made a batch last night and everyone loves them. I did not use raisins(hate cooked raisins) I used chocolate chips instead. SOMEBODY used all my baking soda, so I had to use baking powder instead. They still turned out great. :o)

Caramel Pound Cake

I made this cake today for my birthday. It turned out great and taste wonderful. My oven must be off, it took almost 120 minutes before the toothpick came out clean. Other than that I had no trouble with this recipe. I did add a teaspoon of kosher salt to the batter. Alton Brown said it helps all sweets. I put a nice pinch of salt in the frosting too.

Cajun Crawfish and Shrimp Etouffe

This was good I had to cut way down on the hot stuff. Used chicken broth and canned tomatoes. Added green onions and Worcestershire sauce. Family loved it. There was talk about taking the left overs to lunch at work tomorrow. :o)

Awesome Egg Rolls

This was a great start. I used cole slaw mix for my carrots and cabbage. I skipped the celery. I used raw salad shrimp and a pound of ground pork instead of canned shrimp after browning the pork right before it was done I threw in the shrimp to get pink. I also seasoned the meat with soy sauce while it browned. Then I pretty much followed the rest of the recipe. oh I did use more soy sauce to wetten everything, I think I might have sprinkled to much corn starch over it but all turned out great. :) I served them with my shrimp fried rice and some store bought kimchee.

Oven Ribs

Ribs came out nicely. I did not have any ginger so it was not used, added a bit of honey and molasses to the coke and ketchup. I did season the ribs before browning with garlic and onion powder and I uses a bit of Mrs Dash® garlic and herb seasoning and black pepper. I baked the ribs for 1½ hours covered, and then poured of the grease and sauce, I added some Sweet Baby Ray's® BBQ sauce, and baked them the remaining ½ hour uncovered. They were fall off the bone and finger licking good.
