I love to try new healthy recipes, especially side dishes. During the summer I like to grow my own cherry tomatoes and cucumbers for salads.

Tilapia almondine, homemade macaroni and cheese, taco soup, and chocolate cakebox cookies just to name a few of my favorites.

Gumbo-When the family gets together, we like to make a huge pot of shrimp and crab gumbo
My cooking triumphs
The Tilapia almondine is easy and delicious. My peanut butter fudge gets a lot of requests!
My cooking tragedies
Years ago I worked very hard to make a loaf of bread by hand, it took most of the day. Yuck, the ducks wouldn't even eat it!

Grandma's Corn Bread Dressing
Don't add too much liquid and don't stir much. I put the cooked onions and celery in a Magic Bullet and blended them a little before adding to dressing. I also added Tony Chachere's Creole Seasoning and less salt.Be sure to taste before adding eggs! I love this recipe as it is so similar to my Mother's!!!

Easy Turkey Gravy
Very easy to make, but next time I will cut back on the seasoned salt and just season to taste!

Carla's Fruit Dip
I prepared this for a wedding reception, I made a few changes as follows, whip 2 - 8 ounce packs of low fat cream cheese add vanilla and a little of almond extract add about 1/3 cup of powdered sugar then add a 7 ounce jar of marshmallow creme last, fold in an 8 ounce extra creamy cool whip. Can make the day of event, but is better the next day. Sticks well to the fruit, used it with strawberries, pineapple, apple, and grapes. I sprinkled some splenda to the fruit the night before to add more sweetness. YUM!
