Great place to start, but like many I made changes - still wasn't all that satisfied. Instead of the oil, I used applesauce (which I do with all my baking). The taste that was strongest to me was the baking soda so I'll have to decrease that next time. So the muffins weren't a waste, I just smeared some honey and almond cream cheese on top and YUM! I also substituted some carrots with shredded zucchini, added 1 tsp vanilla, 1/2 tsp nutmeg and 1/4 tsp of cloves.

Downeast Maine Pumpkin Bread

Very delicious. Both my husband and father-in-law loved it. I added some chopped walnuts to the top before I baked it - absolutely scrumptious-dillyumptious.

Jif® Crispy Treats

Yummy! My father-in-law discovered these at a picnic recently. I brought a few home and he hid them from the rest of us. :) I also just made a batch for my toddler, but I used his cheerios instead. They turned out perfectly delicious. I also added the chocolate to the top!

Awesome Sausage, Apple and Cranberry Stuffing

It was my first Thanksgiving Dinner Hosting! I was so incredibly nervous, but everything went off without a hitch! The stuffing recipes is awesome - in my nervousness, I even forgot to add a few of the herbs, but it still was delicious. My fiance, who hates stuffing tried it and took seconds! I left out the sausage (didn't have any and didn't want to spend more money). All in all - amazing, yummy and makes me want a bowl of it right now! Thank you sooo much for sharing!

Applesauce Oatie Cookies

Great Recipe. I unfortunately didn't have enough oats, but I just substituted with flour. I also added 1/4 tsp ground ginger and 1 tbsp vanilla. Super good. A little sweet for me personally, but the whole family loved it. I had to hid them to save some for Thanksgiving!

Basil Tomato Soup

This is a great quick soup. I found that mine was a little watery, like it didn't blend well - I'm thinking I should have drained the tomatoes first. Overall great taste though. I traded one can of plain tomatoes for the some with jalapenos to add a little hot spice, oh and added some celery seed!

Rhubarb Pork Chop Bake

My family of four really loved this recipe. One even asked when I will make it again. Very yummy... My own review, I will probably cut down on the brown sugar a little, great flavor, just a tiny bit too sweet for me. Oh, and next time I think I'll do it in the crock pot - may help with keeping the meat moist and ready to fall apart! Served with garlic baked potato and a garden salad.

Miss Betty's Super Quick Dinner Rolls

the perfect "in a pickle" recipe for dinner rolls. they were a little dense, but it was expected because of the lack of yeast. I did follow the betty crockers substitute for the flour. All in all - i'll use it again and thank you, Betty!

Vegetable Curry

This is a pretty good quick curry recipe. It's definitely a lighter version than with the coconut milk. I did add about 2 cups of veggie broth and some arrowroot powder (about 1.5 tsp) to thicken the sauce up a bit. Very yummy and not much left for lunch the next day.
