Chunky Potato Soup

Fantastic soup! I took advice of other reviews to cook bacon first and then added veggies and broth. Great soup to make on a week night for a hearty meal. Will definitely make again and would even do for company!

Asparagus and Sausage Risotto

This was a terrific risotto recipe. The directions are very precise and makes a perfect al-dente risotto. The only thing I didn't add was the sausage since I used it as a side dish. I have had a hard time making good risotto in the past but finally feel I perfected it with this recipe! Give it a try--it is worth all the stirring and time!!!

Chicken, Garlic, and Sundried Tomato Pasta

This was a wonderful weeknight pasta dish my husband made for me. Thanks to the reviews, he added more milk and wine for a saucier dish and it was delicious!! We will definitely make this again!

Lime Fish Tacos

We've been looking for a new fish taco recipe and this is a winner! The sauce made the dish. We used more lime juice than called for and added fresh cilantro as a topping. I think any white fish can be used as a substitue, as well. We will definitely make this again!

Spinach and Orzo Salad

This was a great salad that I made several times in the summer as an alternative to potato salad at gatherings. It's light and mediterranean taste made my husband and I feel like we were in Greece every time we made it! The more feta cheese, the better.

No Beans About It - Chili

This was the best no-bean chili I've made yet. My husband wanted a beanless chili and none of my cook books had any. It was great served like frito-chili pie: with frito chips, sour cream and cheddar cheese. I cooked it for a rainy football Saturday afternoon and all the men that were over LOVED it!

Fettuccini Tomato Rustica II

This was a great pasta dish that we plan on making again! Loved the flavors; they combined really well. After reading that it was a bit oily for some, I held off on adding all of the olive oil but then added the oil from the sun dried tomates until I reached my desired consistency. I can't wait to make it for guests!

Creamy Penne Pasta

If you like cream cheese, this recipe is for you. I thought this would be a great way to use up some of my fresh herbs from the garden at the end of the season, but the cream cheese overwhelmed the herb flavors. To thin out the sauce a bit, I added a can of diced tomatoes, undrained. It was much better, but still not one of our favorites!
