Crab Dip

This is a great basic recipe to "tweak" up to your own tastes. I used 1 lb. of lump crab meat (fresh), 8 oz neufchatel cheese, 3/4 cup mayo, 1 Tbsp dried minced onion, 1/2 Tbsp Old Bay seasoning, 1 tsp garlic herb seasoning, and also mixed in about 1/2 cup of a shredded Italian 6-cheese mix. I added another 1/2 cup of the cheese mix on top and then baked for 25 minutes in a 1-quart casserole dish. I broiled the top for a few minutes until brown and now my husband says he will never order this in a restaurant again. :)

Mandi's Cheesy Potato Soup

I made this for lunch today and it was delicious and so easy! I used dried minced onions and dried celery leaves, since I did not have fresh. I also sauteed the potatoes and veggies in beef broth for more flavor. I used a gourmet burger spice mix instead of steak seasoning. I also didn't have a 5-cheese mix so I used a mix of sharp and mild cheddar. And I added a couple of tablespoons of dried potato flakes to thicken it up. It was so good, and my family loved it too!

Pumpkin Swirl Bread

I made this as directed and it turned out to be delicious! I also made a low-carb/low sugar version that turned out just as good! For the cream cheese mix, I substituted Splenda (granulated) for the sugar and used neufchatel cream cheese. For the pumpkin bread, I substituted 1 cup of almond flour for 1 cup regular flour; and used 1 cup of Truvia and 1/2 cup of Splenda instead or regular sugar. I also used a full can of pumpkin puree (14 oz) and doubled the amount of cinnamon and nutmeg. The texture was a little more coarse than the regular recipe, but I was so happy with how this low carb/low-sugar version came out and I will definitely make it again!

Easy Pumpkin Muffins

I used a sugar free cake mix (yellow) and 1 can of pumpkin puree. I doubled the spices and added 1 egg, pecans and dried cranberries. I also whipped the batter with my mixer and folded in the nuts and cranberries. They baked in 20 minutes and are delicious!

Butternut and Acorn Squash Soup

This soup is delicious. I make it vegan for my sister's family by using vegan margarine and vegan cream cheese. I also add about 1 tsp cumin, 1/2 tsp nutmeg, and a couple of dashes of red pepper, which is a nice blend with the brown sugar and cinnamon. Yummy!

Slow Cooker Chicken Stroganoff

This was delicious! My whole family loved it, and the leftovers are even better. I actually did not make this in the slow cooker, but used rotisserie chicken and prepared Italian salad dressing. I sauteed the chicken in the dressing, then added some minced onion and a little Italian seasoning. I used neufchatel cheese and low fat cream of chicken soup. I also added steamed broccoli at the end,plus a little milk to thin it out. I will definitely make this again!

Easy Garlic Broiled Chicken

This recipe is awesome! I used skinless, boneless chicken thighs and dipped them in the sauce before placing them into the baking dish. I baked them for about 35 minutes at 375 and then broiled them for about 10 minutes. The taste was divine!

Oven-Fried Chicken

This is an excellent recipe. I used 1/4 cup almond flour instead of pecans, and added garlic powder and a little extra salt. I also cooked my chicken on a rack in the pan and used canola oil cooking spray instead of the butter. The results were crispy and delicious!

Easy Banana Bread

This is my new favorite banana bread recipe! I added pecans and made muffins - the recipe made 2 1/2 dozen. I love the way the tops came out nice and crunchy, but the rest of the muffin was so moist. Yummy!

Buffalo Chicken Dip

This is a great recipe! I did not have buffalo sauce, so I made some variations. I used a can of Rotel tomatoes with chiles, a can of black beans (drained and rinsed), low-fat cream cheese and low-fat ranch dressing. I mixed it with the chicken and then baked in in a casserole dish with the cheese sprinkled on top. It was a hit!

Slow Cooker Italian Chicken Alfredo

This is SO delicious! I have been looking for easy crockpot meals that my husband can make before he goes to work, and we all loved this one. Instead of using the dried salad dressing mix, we used bottled dressing. We also used low-fat cream cheese, the "Healthy" type soup, and added minced garlic and about 1/4 cup of shredded parmesan cheese to the sauce. We left out the mushrooms, since my kids don't care for them. This is definitely a keeper!

Barbeque Ham

This is now our favorite BBQ sauce. I made a low sugar version with sugar free ketchup and Splenda brown sugar. I also used only 2 TBSP of mustard and used dried minced onions, since I did not have any fresh. This added so much flavor to our Easter ham and my family also loved it on their macaroni and cheese. I think I will mix up a double batch of this recipe and keep it in the refrigerator. YUM!

Slow Cooker Sweet Potato Casserole
