Oven-Fried Chicken

This is an excellent recipe. I used 1/4 cup almond flour instead of pecans, and added garlic powder and a little extra salt. I also cooked my chicken on a rack in the pan and used canola oil cooking spray instead of the butter. The results were crispy and delicious!

Banana Bread IV

This is my new favorite banana bread recipe! I added pecans and made muffins - the recipe made 2 1/2 dozen. I love the way the tops came out nice and crunchy, but the rest of the muffin was so moist. Yummy!

Buffalo Chicken Dip

This is a great recipe! I did not have buffalo sauce, so I made some variations. I used a can of Rotel tomatoes with chiles, a can of black beans (drained and rinsed), low-fat cream cheese and low-fat ranch dressing. I mixed it with the chicken and then baked in in a casserole dish with the cheese sprinkled on top. It was a hit!

Slow Cooker Italian Chicken Alfredo

This is SO delicious! I have been looking for easy crockpot meals that my husband can make before he goes to work, and we all loved this one. Instead of using the dried salad dressing mix, we used bottled dressing. We also used low-fat cream cheese, the "Healthy" type soup, and added minced garlic and about 1/4 cup of shredded parmesan cheese to the sauce. We left out the mushrooms, since my kids don't care for them. This is definitely a keeper!

Barbeque Ham

This is now our favorite BBQ sauce. I made a low sugar version with sugar free ketchup and Splenda brown sugar. I also used only 2 TBSP of mustard and used dried minced onions, since I did not have any fresh. This added so much flavor to our Easter ham and my family also loved it on their macaroni and cheese. I think I will mix up a double batch of this recipe and keep it in the refrigerator. YUM!

Slow Cooker Sweet Potato Casserole

Awesome recipe! I used to make it with fresh baked potatoes, but the canned work out so much easier. The topping is the best part, so I doubled it. Yum!
