Country Apple Dumplings
WOW! These should be illegal! The only change I made was to add a little nutmeg with the cinnamon, simply because I like it with apples. These were addicting! To those who thought they were too sweet -don't choose a recipe that takes 1 1/2 cups of sugar and a can of soda! Make sure you use tart, cooking apples and they won't turn into "applesauce". I baked the dumplings the full 45 min. They were wonderful, old-fashioned, baked-in-syrup apple dumplings that were so much easier to make.

Irish Potatoes
Cimmamon-coconut-sugar...OH MY! I was looking for a quick, easy recipe for a St. Patrick's Day desert, but couldn't imagine that these could be any good. So few ingredients! Boy, was I wrong! I only made a half-batch at first, but then I made a full batch when I realized how great they were. I did use only about a teaspoon of cinnamon in my shaking bag, and it was plenty.

Tuna Noodle Casserole II
If you like the flavors of tuna, mushroom soup, chedder cheese and onion, this is NOT bland! This is pure comfort food! Not spicy, not hot, not "gourmet". Just like Mom made. The only thing I added was a little garlic powder, because Mom did. Wonderful nostalgic recipe! Thanks!
