Easy BBQ Flank Steak with Chipotle Mayo

This marinated is simple and delicious! I let it soak up the goodness for roughly six hours. Popped it onto the BBQ to sear, and then placed it on the top rack to finish cooking. This piece of meat really does continue to cook while it is resting, something to keep in mind.

Campbell's Kitchen Creamy Chicken Enchiladas

This was GREAT!!! I used Cream of Celery, spinach and a can of mushrooms for myself, since I am a vegi, but the same recipe for my husband, and I don't the taste was much different! Never under estimate the power of vegitables!

Fabulous Zucchini Grinders

I have never given anything 5 stars so far, but this deserves it! Simple and FABulous! The only I added was chopped garlic and some fresh parsley! Looking for a vegetarian version of a meatball sub, you found it!

Ziti Lasagna

The ricotta cheese was a little much, but the Italian dressing seasoning was right on! I didn't use a big enough pan and it took an extra long time, which caused it to dry out. I highly recommend more tomato sauce regardless.

Vegan Split Pea Soup I

I wouldn't call this "Split Pea" soup, but it is wonderful! As all the other reviews, I did add more STOCK (yep I subsituted the water for vegi stock). Next time I would not add the potatoes, and to make it spicy I added chili pepper flakes. It is hearty and can stand alone as a meal. Plenty of leftovers!

Fast and Friendly Meatballs

They took longer to cook then expected, and were a little dry. Next time I will use more seasoning, and make sure everything is timed better.

Red Skinned Potato Salad

Only potato salad recipe I use. It is easy, and does not all need to be done at once. My suggestion for ALL mayo based salads, MAKE THE DAY BEFORE, it will be sooo much more yummier! Right before I served this, I put in the last egg and fresh chives. It seems to make it POP!

Turkey Pita Tacos

This is great, especially if you have small kids. Easy to handle & good for you. I used hot salsa, because my family likes hot, actually my husband calls this Turkey Surprise, since he didn't realize it was going to be that spicy. I suggest a little lettuce for crunch. Will make again!

Broccoli and Sausage Cavatelli

I thought it was a little dry, even when adding more cheese. Good for lunch at work the next day, since it packs up nicely, and easy to re-heat. I would add more vegi's next time (i.e. peppers, tomatoes) and fresh herbs.
